The word chocolate may conjure up a Wonka vision of sweets, but the confections of today bear little resemblance to the chocolate of the past. We have the ancient Maya to thank for its creation from the beans of the cacao tree. The Maya, more specifically, the Olmec, of southern Mexico believed chocolate had medicinal and magical properties. Originally prepared as a drink, they mixed the cacao seed paste with water, chili peppers, and cornmeal. Are you an onion snob? 🙋♀️ Red onions, Spanish onions, yellow onions, sweet onions, Walla Walla onions, white onions... anything but dried. As a home cook, I would unabashedly snub any proposed pseudo of my favorite culinary workhorse. Deeming the lot of veggies turned spice into something unnatural. Never mind that minced onion, granulated onion, and onion powder are whole foods, not unlike dried thyme or cracked oregano. Today is National Onion Day. As I peel back the layers of the holiday commemorating the 53rd anniversary of the National Onion Association, I am posting to share my favorite onion recipe and avow my new love affair with this unsung hero. Full of potassium, fiber, vitamin C, calcium, and magnesium, this dried allium adds a sweet and savory flavor that can't be realized from fresh onions alone. How do you use this flavor bomb? 1 cup chopped onion = 1/4 cup minced onion = 1 tablespoon granulated onion = 1 teaspoon onion powder. If you're ready to impress, make this dip. Might be best to double it. It won't last long at your Fourth of July potluck. 🎇 Simply combine 24 ounces of room-temperature cream cheese with 1/2 cup of mayonnaise, 2 cups of shredded parmesan cheese, and 2 tablespoons of Inland Empire Spice's Granulated Onion (or 1/2 cup of their Minced Onion or 2 teaspoons of their Onion Powder). If going for the gold, grate in one yellow onion. Combine ingredients and scrape into a 1-quart ungreased baking dish. Bake at 375 F degrees until golden brown, approximately 20 minutes. Serve with chips, crackers, bread. Anything really. Set down the dish quickly, so you don't lose a finger. Humans have been observing the sun's position in the sky for thousands of years. The summer solstice marks the official start of astronomical summer and the year's longest day. Basking in the sunshine is this week's featured Tea-rrific Tuesday selection, Heavenly Huckleberry. Our blend is handcrafted in-house and combines black tea, elderberry, natural huckleberry flavor, blackberry leaf, and cornflower. Available as a blend of either caffeinated or decaffeinated tea leaves, this crowd favorite also makes a stellar sun tea by filling a glass container with water and adding 2-3 teaspoons of loose-leaf tea for every 8 ounces. Cover the container with a lid and place the container in direct sunlight or on a sunny windowsill. Steep the tea for 2-4 hours, or until it reaches your desired strength and color.
