My niece helped me make this. It was the longest she's stood up since her double foot surgery a few months ago. I enjoyed getting to show her how to cut and chop things and explain to her about putting salt in the pasta water. I rubbed her legs for a little bit afterwards. She told me she wants to be a chef. It was a great afternoon.

I watched Jan Parker Cookery make this during one of her lives and I just had to make it. I'm always wanting quick, easy, healthy recipes for when I don't want to heat up my whole house or just don't have the time to cook an extravagant meal. We ate some while it was still warm and then put the rest in the fridge to eat like a noodle salad. Both ways were amazing.
