2 of them came in hours early, 3 of them don’t even work today.. yet here they are at 5:55 am dressed as Hailey from Side Piece to pull this off.

Last night was amazing, I wanted to take a moment to shout out for making it all happen for us. That was in the top 5 coolest things anyone has ever done for us. I’ll never be able to repay you dude. Surprise pit tickets, getting to park with the tour busses and getting to meet the band. Dude 😭💗
And of course, thank you to and as well as ALL of for not only giving enjoying our cheesecakes, but playing the soundtrack of our angst youth.

The Red Hot in Tacoma is looking to fill one kitchen position, Wednesday-Saturday 4pm-close (kitchen stops serving 10pm, doors close 11pm). Opportunities to pickup/cover shifts. Schedule is set/fixed/does not rotate. This is a permanent position. We do not do breakfast or brunch here. There are no fryers here. We do have an air conditioned kitchen. We use 7shifts (email/text based) for scheduling. Position starts $17.59/hour, plus tips (current averages wage+tips right now: Wednesdays are averaging approximately $24/hr total, and approximately $31/hr total on Thu/Fri/Sat shifts). No processing fees for cc tips taken out, & cash tips available next day/not issued on check. PTO is accrued at 1 hour earned per 40 worked, with compounding step increases annually, and can be rolled over/saved. Basic comped food and drink plan to start, expands after 30-days to include off-hours comp food & drink plan. After one year on staff, Simple IRA retirement plan offered with up to 3% matching funds. Position pays every two weeks with direct deposit available. Some commercial kitchen experience preferred. Job available October 2. This week you can grab biscuits, biscuits & gravy, cheesecakes, and the Becky. You can grab those on the limited days we are open, then you can take it wherever you want as long as it’s not Side Piece.
It’s the big anniversary week this week and we opted to celebrate by doing a 7 course dinner, then it sold out so we opted to add another night. Then that sold out. So we added another seating, then that sold out.. so we added another two seatings on another night, then that sold out. It’s pretty rad and ridiculously humbling to have such overwhelming support. We are immensely grateful and totally know you’ll understand when we tell you we aren’t rocking regular service this week.
I mean, how the hell would we rock 5 full regular services in tandem of 5 dinner services.. we aren’t down to pull 18 hour days and we know you’d never want us to 😘
I’m really excited to cook something other than brunch & cheesecakes for yall. It’s been a minutes since I’ve got to do my thing. I hope those lucky folks with tickets enjoy yourselves. Take lots of photos, post them everywhere, if it all goes as planned who knows- maybe one day there’s something like 🤫
I’ve thought long and hard about posting something like this but have decided that the potential disagreement with my stance is outweighed by the impact this has on our community. This isn’t about business, this is about the safety of all of our community members regardless of economic status, housing status, or any other factor.
The complacency to what’s going on around us has perpetuated the problem- furthermore, the August 2024 election yielded a 38% voter turnout for our county. Complaining without actively staying informed and participating in these local elections is just silly.
I’ll be at the next council meeting to address these issues in the 90 seconds they allow me.
The final slide of this post is a real text I received from the spouse of one of my employees. If anything ever happened to any of my crew members.. I don’t know what I would do but I know if I failed to speak out and do my part, I’d be guilty of contributing to whatever happened.
We can do better than this.

IT’S FINALLY OPEN!!
MONTHS OF HARD WORK doing construction instead of cooking, and YOU CAN FINALLY ENJOY IT!! I never want to build anything ever again however I did unlock the a new skill of framing and upholstery and it would be a shame to let those skills go to waste 😅
The expansion is done though there are a few tweaks we need to make like adding more lighting and some other odds and ends, but yall can come enjoy not feeling so cramped 💗
Thank you all for your support and patience through this process. It’s crazy how much we’ve grown in just under a year as a brick and mortar 🥲

Just a little update
It may not look like it, but everything remaining to complete for the expansion is pretty tame or superficial.
Thankfully a walkway existed previously in the exact spot we needed it and the removal of a bad framing and drywall job was all that needed to be done to re-expose it.
We should be on track to open for dine in next Wednesday with our new addition, pending the following:
1) the final inspection next Tuesday
2) tomorrow’s delivery of the last of 3 brand new coolers
3) someone helping us install the new audio system 😅 no serious, if you know how to install commercial audio systems and want to help me out, DM me, we will pay you and hook you up with Side Piece credit
I don’t see this opening date changing. I feel good about it.
A major thanks to my crew for being so patient and holding down the fort when I decided to take on a construction project with a 5 month old business.
