Sneak Peak out of the window of Lydia Project Social Enterprise Mobile Kitchen. It’s been a year since acquired the Penske Truck. Looking out of this window is a lap of victory! All plans, permits, electrical and buildout are complete. Now Equipment installation is in process. Wrap and final inspection to seal the deal and we will be on our way.I can hardly wait! This is no ordinary waffle. This Strawberry-blood Orange Waffle is crafted with fresh strawberries and blood-orange olive oil. Waffles will be available for purchase at the upcoming Lydia’s Project Coffee and Devotion on this Saturday, July 20th, 7AM . Our special guest speakers will be Stacey Dunn, VP of sales and marketing for Chick-fil-a Temecula and Megan Delacruz, Youth leader of centerpoint Church. We are excited and are anticipating a great fellowship. All proceeds go to Oak Grove Culinary Creations, a vocational training for foster care, at risk, and special needs youth. Come early, seats fill up fast!

Is it too early for a Dessert Roll? It’s a Peanut-Better Cup, crusted and filled. I think (my thoughts) when we do not use our God-given gifts we lose out on seeing what God can create through us. I know it’s just a pastry, BUT….it opens up a conversation with God., so why not?

Just going back to what I ❤️. Sometimes life will try to choke the life out of u. Always remember what you love to do and why you do it. I remember when God gave me this concept of a Dessert Roll in the middle of a pandemic. Every since then I’ve been journaling all the creative Ideas about the Roll. People ask me from time to time, “how did you come up with this, that, or the other?” I have tried to think of something scientifically smart or funny but it never fails without forcing an answer, I say Jesus … He’s the best Teacher in the world!

I’m in another competition for Temecula Valley’s 4th annual Desserts and Coffee competition expo July 1st from 2-5pm at Community Mission and Hope Street on Rider in Temecula and tickets are $30 so of course I’m doing a dessert tamale 🫔 so which would be your favorite ? What should I create?

1) Cinnamon bun brown sugar and raisins (no nuts) all gluten free.

2) Sweet Kettle Buttered Corn 🌽

3) Tres Leches Cake Tamales with toasted Coconut and whipped cream on top.

4) Strawberry cake tamales 🍓
