Our latest drop from Finca Amalita! This coffee was sun-dried for many days and left in parchment before being milled. Parchment is a layer of the coffee’s anatomy that is usually removed. We retained it to preserve the raw coffee, utilizing it as a protective barrier against environmental factors such as humidity, air, light, and temperature. At the final stage of processing, it was milled and shipped directly to our roastery. We then roasted this coffee light. The result is an exceptionally smooth and clean cup of coffee, completely free of bitterness. This coffee yields a very light and delicate cup with notes of caramel and delicate citrus. It makes for an AMAZING cold brew, and a great pour over.

The day has come. Our first big shipment of our family farm is here and we’re so excited. This is also including coffees from Volcan Azul.
There are 46 different lots of our coffee in this shipment. To keep things simple, we’re dropping one at a time.
FIRST DROP: Finca Amalita Nano Yellow Honey. This sun-dried Villa Sarchi coffee is fertilized with a unique bio-fertilizer derived from the sea’s nutrient-rich ‘gold,’ ensuring our plants thrive and develop to their full potential. This results in a super smooth honey like flavor with notes of dried fuji apple, grapefruit, and delicate florals.
SECOND DROP: Volcan Azul Red Honey. This has been a staple in our line up for many years and we’re so glad to have it back. Notes of raspberry, honey, tart cherry, and aged rum. A very well balanced cup.

This beautiful naturally processed coffee from the birthplace of coffee is bursting with notes of cinnamon, clove, hibiscus, and white wine.
This is the first coffee we’re launching featuring our newly redesigned label. We’ve simplified our labels to highlight the flavors we taste in coffee, and also to give you a visual representation of roast, and how “wild” or “classic” a coffee may taste. More wild coffees will have more funky & complex flavors, whereas classic coffees with have a more approachable flavors that are found in more traditional coffees.
This year, we will be launching many experimental processes in coffee, from our own farm and from others. We’re so excited to push our limits and redefine what coffee can taste like.

JUICY LULO CO-FERMENTATION 🍊🍋🍍🥝
We are so darn excited to bring you this crazy coffee!
Lulo, a popular fruit in Colombia, is known for its refreshing flavor, reminiscent of a blend of kiwi, citrus, and pineapple. The journey of this unique coffee begins at Brayan Alvear's farm in Huila, Colombia. At just 19 years old, Brayan is the youngest coffee producer we have ever featured! He meticulously picks the cherries at peak ripeness before they are transported to Tolima for processing. This coffee undergoes a three-stage fermentation process: initially, a pre-fermentation in plastic bags for 24 hours, followed by another 24 hours of aerobic fermentation within the cherry. Subsequently, the coffee is de-pulped and fermented directly alongside dehydrated ground Lulo fruits for 5 days. The beans are then dried for 10 days in mechanical dryers. The result is a coffee with an almost indescribable flavor profile. It is, without a doubt, the most unique we have experienced, bursting with intense Lulo notes, ruby red grapefruit, guava, and pineapple. We invite you to savor this unparalleled and truly memorable coffee – a first-of-its-kind innovative process!

Introducing the exquisite Cameroon Noni coffee, a unique single origin sourced from the heart of the Noni area villages. These villages have faced immense challenges, having been at the epicenter of an armed conflict that has raged on for over half a decade. This turmoil has led to the displacement of numerous families, forcing them to tend to their cherished farms from a distance.
Despite these adversities, the spirit of the community remains unbroken. Hilltop Farmers Direct has initiated the construction of a micro washing station in Noni. While it's still under completion, it serves as more than just a facility for coffee processing. It has become a beacon of hope and unity, a place where farmers congregate for meetings. It was here that we imparted essential guidelines to the local farmers, emphasizing the importance of meticulous harvesting and cherry selection to produce the finest quality natural coffee.
The farms contributing to this exceptional coffee are situated at an altitude of approximately 1500 meters above sea level. The coffee varietal used is the renowned Java II, known for its distinct flavor profile.

The initial notes are earthy, tangy, and nutty, which gradually give way to the fruity undertones of apricot and mandarin.
