Oven-Baked Italian Meatballs
Ingredients:
1 lb ground beef
1/2 lb ground pork
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup milk
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, minced garlic, and chopped parsley.
In a small bowl, whisk together the milk, egg, salt, black pepper, dried oregano, and dried basil.
Pour the milk mixture into the meat mixture and mix until well combined.
Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
Bake in the preheated oven for 15-20 minutes, or until the meatballs are browned and cooked through.
Remove from the oven and let cool slightly before serving.

Tropical Pineapple Grilled Chicken Delight
Ingredients:
4 boneless, skinless chicken breasts
1 cup pineapple juice
1/4 cup soy sauce
1/4 cup brown sugar
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon grated ginger
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup pineapple chunks
Fresh cilantro, chopped (for garnish)
Directions:
In a medium bowl, combine pineapple juice, soy sauce, brown sugar, olive oil, minced garlic, grated ginger, black pepper, and salt. Stir well until the sugar dissolves.
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.
Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C).
During the last few minutes of grilling, add the pineapple chunks to the grill and cook until they are lightly charred and caramelized.
Remove the chicken and pineapple from the grill. Let the chicken rest for a few minutes before serving.
Serve the grilled chicken topped with the grilled pineapple chunks and garnish with fresh cilantro.
