🌮 Creamy Taco Soup 🥣
(Crockpot Recipe)
Ingredients:
2 lbs ground beef or turkey
4 oz reduced fat cream cheese
1 cup low fat plain greek yogurt
2 10 oz cans of Rotel diced tomatoes
1 Tbsp Taco seasoning
4 cups low sodium beef/chicken/vegetable broth
1-2 TBSP fresh cilantro
1/2 cup shredded cheese for topping.
Directions:
Brown ground meat until fully cooked.
While meat is browning, place cream cheese, tomatoes, and taco seasoning into crockpot.
Drain any grease off meat and add meat to crockpot. Stir to combine.
Pour broth into crockpot, stir.
Cook on low 4 hrs or high for 2 hrs.
Add greek yogurt & cilantro* last, heat through, serve.
Top with shredded cheese. 🧀
Makes 6 servings.
Per serving: 1 Lean protein, 1 green, 3 condiments

Inspired by the traditional hearty Paraguayan soup, this chicken & dumpling soup is filled with tender chicken and vegetables. We’re keeping the dish lower in carbs by making dumplings out of parmesan cheese (instead of cornmeal & cheese). Developed by The Culinary Institute of America, this NEW Lean & Green recipe makes 4 servings (1 leaner, 1 healthy fat, 3 green, & 2 condiments).

Ingredients:
1¾ lbs. boneless, skinless chicken breasts
4 cups chicken stock
½ tsp salt
2 cups small-diced celery
2 cups small-diced turnips
2 cups small-diced red bell peppers
2/3 cup reduced-fat parmesan cheese
1 large egg
Directions:
1. In a stockpot, bring the chicken stock to a boil, and add the chicken breast and salt. Cover, and simmer gently for about 20 minutes.
2. Once the chicken breast is tender, remove it from the broth and set it aside to cool. When cool enough to touch, shred the chicken into bite-sized pieces.
3. Add the celery, turnips, and red peppers to the simmering broth, and cook slowly for about 5 to 7 minutes until tender.
4. Add the shredded chicken, and bring to a gentle boil to heat through.
5. For the parmesan dumplings, bring a small pot of water to a very low simmer.
6. Combine the parmesan with the egg in a small bowl to make a batter.
7. Using a teaspoon, make 12 small dumplings with the batter.
8. Adjust the water so that it is just below simmering, and gently drop the dumplings into it. Cook gently for about 1 to 2 minutes. Remove the dumplings from the water with a slotted spoon, and place on a paper towel to allow them to dry (note: the dumpling are delicate when they are cooked, but will firm up as they cool).
9. Divide the soup and dumplings into 4 equal portions (per serving: about 2¼ cups of soup with 3 dumplings served on top).
Tip: You can bake the dumplings in the oven if you prefer. Place the 12 dumplings on a non-stick baking sheet and bake at 400°F for 5 minutes.
Nutrition Facts Per Serving: 370 calories, 49g protein, 18g carbohydrate, 10g fat
Keep the cupboards free from nutritionless snack foods. If these items aren’t in the house, you can’t reach for them!

💡Knowing the difference between PHYSICAL and EMOTIONAL hunger💡
Often times, over eating is a result of emotional hunger. Knowing whether your hunger is emotional versus physical can help you discern whether your body actually needs something else instead.🤔
Before grabbing whatever you see in the moment, do a quick assessment of your hunger level. Using the question, is your hunger emotional or physical?
I love this chart when assessing. If you’re experiencing emotional hunger and emotional cravings, what does your body actually need at that moment.
Do you need more sleep? Do you need to connect with a friend? Do you need water due to low hydration and feeling fatigued or light headed?
Try to find the underlying reason behind the emotional craving.🤗
We can get ourselves into bad habits quickly and I can say with all of my clients today, they are or have struggled with this.
BUT, this is the HABIT work that we focus on, one ☝️ at a time on program!!
It’s a game changer, whatever the habit, you can change, with goals!! Let’s do this!
