🍫🍪 Looking for a simple yet delightful chocolate recipe? Try our quick and easy Chocolate Mug Cake! 🥣

Ingredients:
- 4 tbsp flour
- 4 tbsp sugar
- 2 tbsp cocoa powder
- 1 egg
- 3 tbsp milk (Can substitute coconut, cashew, h**p or oat milk - almond and soy do not work very well for this recipe)
- 3 tbsp vegetable oil
- 1/4 tsp vanilla extract
- Pinch of salt

Instructions:
1. In a microwave-safe mug, mix the dry ingredients.
2. Add the egg and mix thoroughly.
3. Pour in the milk, oil, and vanilla extract; mix well.
4. Microwave on high for 1-2 minutes (depending on your microwave’s power).
5. Let it cool slightly, then enjoy your warm, gooey chocolate cake!

Our second recipe is another classic!

Here's a classic and delicious recipe for poached salmon with a dill and lemon sauce:

Poached Salmon with Dill and Lemon Sauce

Ingredients:
- 4 salmon fillets (6 ounces each)
- 4 cups water
- 1 cup dry white wine (optional, can use water instead)
- 1 lemon, sliced
- 1 small onion, sliced
- 2 cloves garlic, smashed
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1 teaspoon salt
- Fresh dill sprigs

For the Dill and Lemon Sauce:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper, to taste

Instructions:

1. Prepare the Poaching Liquid:
- In a large, deep skillet or saucepan, combine the water, white wine (if using), lemon slices, onion, garlic, bay leaf, black peppercorns, and salt.
- Bring the mixture to a simmer over medium heat.

2. Poach the Salmon:
- Reduce the heat to low to maintain a gentle simmer.
- Add the salmon fillets and a few sprigs of fresh dill to the poaching liquid. Ensure the salmon is fully submerged (add more water if necessary).
- Poach the salmon for about 10-12 minutes, or until the salmon is opaque and flakes easily with a fork.

3. Make the Dill and Lemon Sauce:
- In a small bowl, combine the mayonnaise, sour cream, fresh dill, lemon juice, and lemon zest.
- Mix well and season with salt and pepper to taste.
- Refrigerate the sauce until ready to serve.
This sauce is great on fish, shellfish, and even chicken.

4. Serve:
- Carefully remove the poached salmon fillets from the poaching liquid using a slotted spoon or spatula. Let any excess liquid drain off.

Our first recipe today is for Rainbow Trout and the recipe is a classic!

Sure! Here’s a delicious recipe for pan-seared rainbow trout with a lemon herb butter sauce.

Pan-Seared Rainbow Trout with Lemon Herb Butter Sauce

Ingredients:
- 2 rainbow trout fillets, skin-on
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh lemon juice
- Lemon wedges, for serving

Instructions:

1. Prepare the Trout:
- Rinse the trout fillets under cold water and pat them dry with paper towels.
- Season both sides of the fillets with salt and pepper.

2. Sear the Trout:
- Heat the olive oil (or other high temp oil of choice) in a large skillet over medium-high heat.
- When the oil is hot, place the trout fillets in the skillet, skin-side down.
- Cook for about 3-4 minutes on each side, or until the skin is crispy and the flesh is opaque and flakes easily with a fork. Remove the trout from the skillet and set aside.

3. Make the Lemon Herb Butter Sauce:

4. Kokanee Salmon: Landlocked sockeye salmon found in lakes.
