We're changing up our menu!  Effective today, we have a few new items on our menu and have retired a few as well!  Don't worry, your favorites, our Soft Pork and Shrimp Gau Gee, Salt n Pepper Kabocha, New York Strip Steak, Chicken Piccata and Garlic Shrimp are still on the menu!!   Added to the list is Chef Jim's delicious Teriyaki Chicken and Potato Macaroni Salad!  We also updated our fish options for the Fresh Catch Sandwich and Beer Battered Fish.  Our Fresh Catch sandwich will be based on what's available from our fishmonger and for the Beer Battered Fish, we're going with a more sustainable option with farm-raised Kohala mountain Sunfish.  Delish!  Our full menu is available for dine-in or take out! 

With the increase in shipping, gas and food costs, we also had to increase the pricing for several items and the new pricing is reflected on our new menu.  Thank you for your understanding.

A fun and tasty way to cook corn is to grill it with the husks on. If you don’t have a grill, you can roast in the oven. Preheat an oven to 400°. Trim the silks from the end. Soak the corn in water for about five minutes. Place on a large baking tray and place in a preheated oven. Bake for about 15 minutes turning the ears once. Remove from the oven and carefully pull back the husks. Should have a slight toasty flavor.

When baking, it is a good practice to get ingredients to room temperature as it helps with texture and helps to incorporate air, which will make baked goods lighter.  

Remember though, most room temperatures are not as high as Hawaii’s room temperature.  Your ingredient temperature should be about 65°f. I would recommend taking out ingredients 30 minutes prior to using in a 70°f room.

The Big Game is a few days away and we can't wait!  Beer buckets and prizes arrived today! Chef Jim’s Tip ~
To prevent eggshell fragments from getting into your food, crack the egg on a hard counter or cutting board before breaking the egg into the bowl.  If you need to retrieve a shell fragment from the eggs in the bowl, you can use half of the eggshell to scoop it out. It seems to cut through the egg white smoothly.

Need a substitute for buttermilk? You can add one teaspoon of vinegar or lemon juice to a cup of milk. It will not be as thick as buttermilk, but it will react the same in recipes and have a slightly zesty flavor.

Need a substitute for cake flour, you can replace two tablespoons of every cup of all-purpose flour needed for a recipe with two tablespoons of cornstarch.

Just like you need to socially distance these days, you want to give items you are cooking in a sauté pan a little social distance. If the pan is too crowded, you won’t get a good sear and the items will end up simmering in their own juices.
