Beef Geek Cuts
Many of the beef geek cuts come from the Chuck primal. Most breeds of cattle, such as Black Angus, marble primarily in the Rib and Loin primals. Wagyu originated as draft animals and were bred to put on growth in the front of their body (Chuck - shoulder and neck), and Wagyu display exceptional marbling throughout most primals.
Grilled Lamb Sandwiches
Ingredients
1/2 tablespoon capers
1 teaspoon fresh oregano leaves
4 cloves garlic
2 cups plain unsweetened yogurt
2 tablespoons extra-virgin olive oil, plus more for grilling
1/2 teaspoon lemon zest
Salt and freshly cracked black pepper
One 3 to 4-pound leg of lamb, butterflied
1 sourdough baguette (use 2 if serving 8)
Harissa Mayo, for serving, recipe follows
Quick Pickled Sweet Cucumbers, for serving, recipe follows
Harissa Mayo:
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons store-bought harissa paste
1/2 teaspoon red wine vinegar
1/4 teaspoon ground cumin
Salt and freshly cracked black pepper
Quick Pickled Sweet Cucumbers:
1 hothouse cucumber, finely sliced
1 teaspoon kosher salt
1/2 Fresno chile, halved lengthwise, seeded if desired and finely sliced
3/4 cup sugar
1 cup white vinegar
How to Cut Steak the Right Way
You might think a steak is a steak, but a lot of things go into creating the perfect eating experience. After finding the best steak to buy (we have suggestions that fit any budget), you have to cook it to the perfect level of doneness—that’s medium rare, if you’re asking me. When it’s finished cooking and has rested for 10 to 15 minutes, all the critical thinking parts are done, right?
Chipotle Steak & Egg Breakfast Bowls
INGREDIENTS
1 tbsp oil
2 russet potatoes, peeled and diced
1/2 white onion, diced
1 red bell pepper, diced
1/2 poblano pepper, diced
1 cup corn kernels
2 tbsp Roasted Chipotle Garlic Seasoning, divided
1 8oz striploin steak
2 large eggs
1/2 lime, cut into wedges for serving
2 tbsp fresh cilantro for serving

Beef Steak and Garlic Mushrooms
Ingredients:
2 pieces of beef steak around 1 inch thick
600 gms of mushrooms
10-15 cloves of garlic
1 tsp of mustard sauce, 1 tsp of schezwan sauce, 1 tsp soy sauce, 1tsp oyster sauce, 1 tsp green chilly sauce, 1 tsp Worcestershire sauce
1 tbsp salted butter
salt and freshly ground black pepper as per your taste
10-12 tbsp of coconut oil
Ingredients
¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks
