🍴Recipe Of The Week🍴
BAKED SPAGHETTI SQUASH CHICKEN
BOATS
1. Preheat over to 350 degrees
2. Cut squash in half lengthwise; scoop out seeds and fibers with a spoon. Place in baking sheet, cut side up, and sprinkle with salt and pepper. Roast at 350 degrees for about an hour, or until skin gives easily under pressure and the inside is tender. (microwave option- follow directions above then put on microwave safe dish, cover, and set for 8-9 minutes.)
3. Meanwhile, season chicken with salt, pepper, garlic powder, and oregano. Heat grill, pan, or skillet with a little olive oil over medium-high heat. Cook chicken on both sides until cooked through, set aside.
4. Remove squash from oven or microwave. Fluff spaghetti like strands with a fork on both sides, leaving it in the shell. Season with salt and pepper.
5. Warm marinara sauce in microwave and combine with parmesan cheese. Spoon about 1/4 cup sauce in each squash boat.
6. Slice chicken on diagonal and place each piece on top of the squash. Top with 1/4 cup of remaining sauce. Top with mozzarella cheese and place in oven for 350 degrees until cheese is melted and sauce is hot, about 12 minutes. Garnish with fresh basil.

Tip Thursday!!
Whether you're motivated by money, or purpose, the goal or the journey, it's important to always keep in mind that consistency is more important than perfection.
Holding ourselves to a perfect standard only sets us up for failure, disappointment, and making the progress a whole lot harder than it needs to be.
The “All or Nothing” Mindset or having to be “Perfect” can be hard to break.
Remember Progress and Consistency trump Perfection!!
