This recipe is loaded with power-packed ingredients thatβll fill you up and keep you feeling satisfied.
If you want more protein, add some grilled salmon or chicken. SO GOOD.
Power Packed Chopped Salad
(Serves 4)
6 cups (200 g) mixed leafy greens
1 medium cucumber, diced
2 medium tomatoes, diced
1 large avocado, diced
1 cup (185 g) cooked quinoa or brown rice
1 cup (170 g) cooked shelled edamame
1 cup (150 g) corn kernels, fresh or frozen and thawed
Β½ cup (50 g) dried cranberries
Β½ cup (100 g) goat cheese crumbles (optional)
Dressing:
ΒΌ cup (60ml) olive oil
2 Tbsp apple cider vinegar
1 Tbsp honey or maple syrup
Juice of 1 lemon
1 garlic clove, minced
Salt and pepper to taste
Using a cutting board and sharp knife, chop the greens, cucumber, tomatoes, and avocado into bite-sized pieces. Place in a large salad bowl. Set aside.
Make the dressing by combining all the ingredients in a small bowl and whisking them together. Taste and adjust the seasoning.
Add the quinoa, edamame, corn, cranberries, and goat cheese to the salad mixture and toss gently. Pour the dressing over the salad and toss until everything is well coated.

A study published in the International Journal of Sports and Exercise Psychology found that there are THREE types of support that influence our results:
π€ Emotional support: can help you START and MAINTAIN a health and fitness routine.
This could mean having someone to commiserate with⦠or someone to cheer you on!
π€ Practical support: doesnβt necessarily help you START a new routine, but it can help you keep up a routine once youβve got the ball rolling (like a walking buddy you meet up with every weekend).
π€ Negative support: can lead you to do LESS! This is when certain people (we all know them!) try to talk you out of your new habits so THEY donβt have to change.
If you donβt have the other two kinds of support, itβs easy to let the negative support sabotage your progress!

Take a minute this week to think about whoβs in your corner (or could be) when it comes to you getting healthy.

π Take a brisk walk: Even just 10 minutes of walking can help clear your mind and increase endorphins, which can reduce stress hormones.
π Practice deep breathing: Try the 4-7-8 technique. Breathe in for 4 seconds, hold for 7 seconds, and exhale for 8 seconds. This can help reduce anxiety and bring your focus back to the present.
π Do a quick bodyweight workout: Engage in a short circuit of exercises like squats, push-ups, and lunges. Physical activity can boost your mood and energy levels.
You might be surprised at how much more manageable all the βstuffβ feels when YOU feel better.

πBurgers are great, but sometimes you gotta mix things up β and one of my favorite ways to do that is to make meatballs.
π§βπ³Plus, if youβre sick of same-old-same-old ground turkey and chicken, you can dress them up with some tasty βextraβ meatball ingredients to spice things up!
Serve them with potato, rice, veggies⦠or even as a warm salad topper or sandwich filling.
Turkey Meatballs
(makes 16 meatballs β 3 to 4 servings)
1 small yellow onion, finely chopped
Β½ bell pepper (red, yellow, or orange), finely chopped
β
cup (35 g) almond flour
1 tsp garlic powder
Β½ tsp sea salt
1 lb (450 g) lean ground turkey or chicken
2 Tbsp coconut aminos
2 Tbsp olive oil
Preheat your oven to 400ΒΊF/200ΒΊC. Prepare a baking sheet by lining it with parchment paper or coating it with 1 Tbsp of olive oil. Set aside.
In a large bowl, stir together the onion, bell pepper, almond flour, garlic powder, and salt. Add the turkey or chicken, and coconut aminos, and stir again until all the ingredients are combined.
Form into 16 meatballs and place on the prepared baking sheet. Place in the oven and bake for 20 minutes, or until golden brown and cooked through.
