Understanding the Dangers of Refined Foods
In this informative video, Dr. Ernest delves into the misconception that starch-rich foods are inherently harmful. He clarifies that the issue lies not with starch itself, but with refined foods that strip away essential nutrients.
The Whole Grain Picture:
Whole grains are comprised of three layers: the bran (outer layer), endosperm (white part), and germ (heart).
The bran provides fiber, which regulates blood sugar levels and supports gut health.
The germ contains essential fatty acids, vitamins, minerals, and phytochemicals.
The Problem with Refined Foods:
Food manufacturers remove the bran and germ, leaving behind only the endosperm.
This removes up to 90% of vitamins, minerals, and phytochemicals.
