Not my recipe just sharing

Air Fried Tandoori Chicken recipe! 🔥 Marinated chicken with a blend of spices and a touch of red coloring for that authentic hue. Then, elevate the taste by infusing smoky goodness using a hot charcoal technique. Paired with succulent Ribs marinated in a tantalizing mix and baked for a mouthwatering treat! 🍖 And Cheesy Broccoli Bake to complete the feast 🥦😋

Ramadhan day 24

Air fried tandoori chicken

Marinate with
Salt
Red chillie powder
Turmeric
Coriander powder
Cumin powder
Lemon juice
Tandoori spice
Garam masala
Ginger garlic paste
Powder Red colouring
Drizzle of oil

Heat a piece of charcoal. Place hot charcoal on a piece of foil in chicken marinade. Then drizzle oil over charcoal, cover and let smoke for 10 min.

Air fry for 30 min.
( 15 min on each side)

Ribs

Marinate with
Salt
Red Chilli powder
Garlic
Steers peri peri sauce
Coke
Tomato sauce

Cover with foil and bake 230° oven for an hour. Then remove foil and continue baking until done.

Cheesy brocolli bake 🥦🥦🥦🧀🧀🧀

One brocolli (steam with salt and pepper)
1 tin koo Creamstyle Sweetcorn
Grated cheese

White sauce
Heat
2 tbls butter or ghee
add 2 tbls flour
Mix then add
1 ½ cup milk and mix with a whisk.
Add salt, aromat and white pepper.

Mix everything together and add a little ground green chillies.

Place in a casserole dish. Top with extra cheese. I airfried for 10 min 180° just before serving. Or bake in an oven.

One ltr milk
One big condense
One big nestles cream
3 tbl klim
1 heaped tbl custard powder
2 tsp ghas powder
Dash elachie powder
Colouring optional
I left out the nestles cream and used fresh cream instead.

Beat all together n heat on stove till boiling stirring often cool pour into mould n fridge till set. The cream makes it much more smoother gives and a nicer taste

Burfee Truffles

Recipe Credit- adapted recipe from everything homemade
500g nido
1 small tin nestle cream
*rub cream into nido and leave aside for a few hours*
-process the mixture in a food mixer till very fine
-sieve and remove all lumps
In a pot take
2 cups milk
375g icing sugar *boil the above mixture*
Now add in
125g butter
1/2 cup fresh cream *boil together till sticky*
Now slowly add in the nido powder crumbs
1/2 tsp elaichi powder
1/2 cup almond powder *cook for a few minutes and stir occasionally on very low heat*
Make sure the burfee doesn't change its colour
Remove from heat and divide into 3 dishes
Now you can flavour it according to your choice
These are just a few ideas
*Rose-add rose essence, drops of pink colour,crushed rose petals
*pistachio-add pistachio essence and grinded pistachio *chocolate-add melted chocolate or cocoa powder *mango-add mango essence and colour
*Turkish delight-add essence,cubed turkish delight & drops of pink colour *raspberry-add raspberry essence,dessicated coconut & drops of pink colour *coffee-sieved coffee granules *mix each dish well,cover with clingfilm and refrigerate overnight*
The next day form into small balls and dip in melted chocolate
Decorate as desired

Coconut/almond biscuits
250 g margarine at room temperature (Stork Bake)
250g sifted icing sugar
120g dessicated coconut
120 g chopped almonds
250g sifted cake flour
50ml cooking oil
10ml almond essence

Preheat oven 170 deg

Beat margarine and icing sugar until creamy.
Add almond essence and beat again.
Add in all the other ingredients and make a soft pliable dough.

You can either pipe onto greased baking sheets or roll into balls and dip into icing sugar and bake for approximately 15 minutes

Pepper and carrot pickle ohhhh soooo yummy!😊
Quantities can be doubled
4 large carrots rinsed, cut into bite sized pieces
2 red peppers cut into bite sized pieces
2 yellow or green peppers cut into bite sized pieces
Place veggies into a large dish
Now add the following:
3 heaped tablespoons of pickle masala
(Some brands contain salt)
Add salt accordingly
125 ml of white vinegar
10 ml each roasted and crushed coriander and cumin seeds
150ml of oil
Mix thoroughly making sure veggies are evenly coated with the spices.
Fill your bottles and leave to rest on the kitchen counter for a day before placing in the refrigerator.
You can add more oil to the bottle before refrigerating

Baked fish ⭐⭐⭐

Ingredients
800 g box hake fillet washed and drained well.
Remove skin while still frozen.

100g melted butter
2 tblsp lemon juice
2 tblsp mayonnaise
2 tsp garlic paste
2 tsp chillie powder
2 tsp fish spice
1 tsp lemon pepper
1 tsp cajun spice
1 tsp salt

Method
Preheat oven to 200 degrees.
Mix all the ingredients together.
Line an oven tray with foil.
Brush with oil.
Place fish on tray.
Pat fish dry with paper towel.
Brush the marinade on both sides.
Place onion rings, green peppers and lemon slices on top of fish.
Sprinkle with parsley.
Bake for 25 to 30 minutes.
Serve with garlic bread and chips.
Once tasted never wasted 😋

*CONFIRMED CASES OF PINK EYE IN ETHEKWINI:*

‼️KWAZULU-Natal Health MEC Ms Nomagugu Simelane is urging the public to avoid Pink Eye infection by practicing good personal hygiene, such as regular hand-washing, and avoiding the sharing of face cloths, eye cosmetics, or pillows.

At least 161 cases of Pink Eye have been confirmed in various parts of EThekwini District, since the 26th of February 2024.

The cases were recorded at Clairwood Hospital (55), KZN Children’s Hospital (50); Cato Manor Community Health Centre (39); McCord Hospital (15) and Halley Stott Clinic (2).

MEC Simelane says a few basic hygienic practices can help contain the spread of Pink Eye.

“Now that we have confirmed cases of Pink Eye in EThekwini District, we are urging those who have its symptoms not to sit at home, but to visit their nearest clinic. During the era of COVID – 19, we had developed a number of habits that promoted good hygiene, such as regular hand washing with soap and water or sanitizer. Those are some of the things we need to re-orient ourselves with.”

SOME FACTS ABOUT PINK EYE:

* Pink eye is an inflammation of the transparent membrane that lines the eyelid and eyeball. This membrane is called the conjunctiva.
* When small blood vessels in the conjunctiva become swollen and irritated, they're more visible. This is what causes the whites of the eyes to appear reddish or pink. Pink eye also is called conjunctivitis.
* Pink eye is most often caused by a viral infection, also known as viral conjunctivitis, which is highly contagious.
* It also can be caused by a bacterial infection, an allergic reaction or — in babies — an incompletely opened tear duct.
* Though pink eye can be irritating, it rarely affects your vision.
* Treatment can help ease the discomfort of pink eye.
* Because pink eye can be contagious, getting an early diagnosis and taking certain precautions can help limit its spread.

*CAUSES OF PINK EYE:*
* Viruses.
* Bacteria.
* Allergens.
* A chemical splash in the eye.
* A foreign object in the eye.
* In newborns, a blocked tear duct.
* Contact lens use
* Fungi
* Certain diseases

*PREVENTION OF PINK EYE:*

* Don't touch your eyes with your hands.
* Wash your hands often.
* Use a clean towel and washcloth daily.
* Don't share towels or washcloths.
* Change your pillowcases often.
* Throw away old eye cosmetics, such as mascara.
* Don't share eye cosmetics or personal eye care items.
* Schools should allow infected children to remain in school once any therapy is implemented, except when viral or bacterial conjunctivitis is accompanied by systemic signs of illness.
* Infected students should refrain from attending school if they are unable to avoid close contact with other students.

Vanilla cupcakes
Ingredients:
250g margarine at room temperature
1 1/2 cups castor sugar
4 eggs at room temperature
2 teaspoons vanilla essence
500g cake flour
250ml milk

Method :
In a mixing bowl add in margarine and sugar. Beat till creamy them add in eggs. Beat again and add in vanilla essence. Sift in flour and mix then add milk beat till nicely combined. Spoon mixture into cupcake paper cases. Bake in a preheated oven for 20 minutes or until done. (180 deg). Decorate as desired.

Buttecream icing:
300g of sifted icing sugar
125g of wooden spoon white margarine
2 tablespoons of milk
1/8 teaspoon of colouring of your choice
Beat the margarine until creamy add the icing sugar gradually then the milk and colouring.

condensed milk biscuits

125g margarine or butter
125ml condensed milk
200g corn flour
Sufficient cake flour to make a soft dough that can be piped
Preheat oven 180 deg. Grease a cookie sheet. Cream butter with condensed milk add in the corn flour and beat until light and creamy. Now add in the cake flour a little at a time until you get a soft biscuit dough approximately 3/4 of a cup. Pipe using a nozzle onto the greased cookie sheet and bake for approximately 15 minutes . Decorate as desired.

INGREDIENTS
4 cups all-purpose/plain flour
2 tbsp sugar
1 tsp salt
½ tsp nutmeg
2 tbsp powder milk
2 tsp yeast
1½ cup milk
2 eggs
2 tbsp melted butter
Enough oil for deep frying

METHOD
*Sift together flour,salt,nutmeg and powder milk ,set aside
*In a jar,add luke warm milk,yeast ,eggs,melted butter and sugar...mix well
*Make a well at the centre of your flour mixture and pour the wet ingredients mixing well
*The dough will be sticky but knead for about 5min
*The dough must not be too thick ,it should be soft and smooth
* Cover the dough,let it rest in warm place for about 60min
*Grease your hands with oil and make little dough balls using the palm of your hand,drop the dough balls in hot oil and deep fry until golden brown

The Most Delicious Chocolate Caramel Cupcakes

Ingredients:

1 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
1/2 cup caramel sauce
For the Caramel Buttercream Frosting:

1 cup unsalted butter, softened
1/2 cup caramel sauce
4 cups powdered sugar
1 tsp vanilla extract
A pinch of salt
Directions:

Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
Gradually stir in the boiling water until the batter is smooth. It will be thin, but that's okay.
Fill each cupcake liner about 2/3 full with batter.
Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
For the Caramel Buttercream Frosting:

In a separate mixing bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, caramel sauce, vanilla extract, and a pinch of salt. Beat until the frosting is smooth and fluffy.
Once the cupcakes have cooled, pipe or spread the caramel buttercream frosting onto each cupcake.
Drizzle some additional caramel sauce on top of each cupcake for extra flavor and decoration.
