Mitch is an Aussie battler, but instead of succumbing to the hardship he has faced, all he wants is a better future for his kids. As a single Dad, he is struggling to provide meals for his three children with autism in the midst of the cost-of-living crisis and life is hard.
And yet, despite all his challenges, he volunteers to make meals for others at a Foodbank Member Charity when he struggles himself.
We are constantly blown away by the sheer resilience of those we meet in our communities, and Mitch is the embodiment of the Aussie spirit. He is doing what Queenslanders do best โ facing adversity with a determined spirit and a big heart.

This is a good guide for balancing your meals. We try to apply similar principles when cooking a recipe too.
BUILDING A BALANCED MEAL
Building a balanced meal is all about including the major food groups in different proportions on your plate and trying to include a variety of different foods.
We recommend you:
- Fill ยผ of your plate with a source of carbohydrate which can include wholegrains such as brown rice, wholemeal pasta or wholegrain bread or starchy veggies like potato.
-Fill 1/2 plate your plate with lots of different coloured vegetables
-Fill ยผ of your plate with a source of protein. Try lean meats, chicken, fish and eggs, or plant-based sources such as tofu and legumes such as lentils, chickpeas, or black beans.
-Add a portion of healthy fats. Healthy fats are found in foods like avocado, Extra Virgin Olive Oil, nuts and seeds.
A balance of foods containing protein, carbohydrate, fats, and fibre from vegetables makes for a nutrient packed meal giving you sustained energy and can help you feel fuller for longer.
Interesting read, focusing on cooking unpeeled vegetables. Where we live, you're able to put vegetable scraps in the green waste bin. It's a great idea to check with your local council to see if you're able to place food scraps in the green bins, to be used for compost in order to reduce landfill and waste.
Avoid peeling your potatoes ๐ซ On average one potato contains 30mg of vitamin C, which will provide over half of your daily vitamin C requirements. By peeling a potato before cooking it, you will destroy significant amounts of that vitamin C. Not only does peeling your vegetables have an immediate impact on their nutritional value but it also has an impact on the environment.
Nutrition Australia reports that Australian households account for 2.46 million tonnes of the country's food waste annually. To reduce this statistic Queenslanders need to do their part. Remember to use the whole vegetable.

๐ฅ๐ฅ Answer: You can't tell from this photo! But, there are some things you can do to prevent your risk:
โ Never wash dirty eggs. Dirty eggs may have Salmonella bacteria on their shell and washing them allows bacteria to move from the outside of the shell to inside.
โ Never use cracked eggs. The cracks allow Salmonella to enter the egg and grow inside ๐คข
