Who is meal prepping for the week ahead?

As the weather warms up, so does the salad
selections.
Here's mine for the week...
Waldorf salad with vegan mayo + apple cider vinegar dressing.
Chickpea salad with spring onions, red capsicum slices, pomegranate seeds with fresh ginger + red onion.
Green salad - spinach leaves, rocket, cucumber, garden peas, green cabbage with vegan cream cheese and sundried tomatoes.

Plus home-made dark mint chocolate. Cacao butter, cacao, coconut syrup and fresh mint. Melt together, whisk, pour over a baking tray with brown baking paper and refrigerate. Once set break into sizes and place in a container and back into the fridge. Yummy!!!
