Daily intro of Langtons 1st Classified3️⃣-Wendouree Shiraz

Clare Valley, Australia
Red - Rich and Intense
Critics Scores: 94/100

Wendouree Shiraz, rooted in the estate’s 1893 plantings, likely traces its genetics back to James Busby’s original collection. Situated on a northerly ridge in Clare Valley, the unirrigated vineyards boast shallow, limestone-infused soils nurturing low-yielding old shiraz vines yielding small, thick-skinned berries. Despite its esteemed legacy, few old bottles exist due to bulk sales and merchant bottling practices until 1974, keeping these wines rare. Most blended and single varietal shiraz wines were almost never seen

Winemaking
Located on a ridge of Clare Valley, the soils of the unirrigated Wendouree vineyards are shallow and meagre with red loam over limestone. The low-yielding old shiraz vines produce small berries with thick skins and a very high seed content. The recently implemented vertical shoot positioning trellising system optimises exposure to sunlight and protects the fruit from ultraviolet light. Vinified in stainless steel lined open fermenters, and matured in new (20%) and seasoned oak for around 12 months

Tasting Note
The wine typically possesses a core of blackberry, with black olive aromas, clarity and buoyancy of fruit on the palate, persistent, muscular tannins and underlying oak. This style of this shiraz has been described as an iron fist in a velvet glove

Current Market Price
averages at $246 ( ex-tax ), vary by vintage. The overall price showed a small fluctuated uptrend

Winery
Wendouree, a revered Australian producer, bears rich historical significance. Known for robust fruit intensity, their signature style showcases powerful shiraz and unique blends like shiraz malbec. The wines are rare and challenging to access, with tiny allocations still offered to their most loyal customers by handwritten letters.

On the other side of the globe from where whisky first originated, Sullivans Cove is turning the whisky world upside down. They are dedicated to handcrafting single cask whiskies, and every cask is unique. Each cask is an opportunity to explore. Today JC Fine Wines introduces to our friends the Australia’s most awarded whisky distillery - Sullivans Cove

In 1994, on an island at the end of the world, a distillery was born. They were given free rein to explore and refine their craft, bringing the unique flavors of Tasmania, Australia to the whisky making process.
Twenty years later, Sullivans Cove Whisky was named ”The World’s Best Whisky“, rewarding the distillers‘ commitment to crafting exceptional whisky. Overnight, whisky lovers around the world were drawn to the region.

Today, Sullivans Cove remains committed to the sublime, nurturing each cask to its natural peak with the human senses, allowing each batch of whisky to reach its full potential.
Whisky is the mainstay of Sullivans Covey, and most whiskies are produced in very small quantities, sometimes just one cask, sometimes perhaps two. A range of different oak casks are used there, all of which have had different past lives. For example, TD0323 French Oak Single cask was Aged 14 years and 2 months uses French oak that were previously used to make a tawny port style fortified wine. Being a single cask release, only 421 bottles in total for the world.

Many people ask why Sullivans Cove specialises in single cask whisky - unlike large distilleries that put many casks together and focus on consistency of product, they prize the individuality of each single cask whisky. As the whisky ferments and matures in the casks, new flavors and aromas are created, which creates a flavor profile that is completely unique to that single cask. No two trees are the same, no two casks are the same and no two whiskies are the same. Every single cask can never be replicated, always a new discovery.

Sullivans Cove: The World’s Best Single-Malt Whisky

Sullivans Cove is Australia’s most awarded whisky, which has been awarded “World’s Best Single Cask Single Malt” for many years. JC Fine Wines is honored to share some newly arrived selections of Sullivans Cove with our connoisseurs!

1️⃣Sullivans Cove French Oak ex-Tawny Single Cask Single Malt Whisky TD0323
This whisky has become a legend in its own right, one of the most sought after whiskies in the world, and the bottle that put the Australian whisky industry on the map after winning World’s Best Single Malt at the World Whiskies Awards 2014.
Aged for Fourteen years and Two months in a 300 litre, French Oak ex-Tawny cask, TD0323 is a classic example of the Sullivans Cove French oak ex-Tawny style. Bottled unflocked and unfiltered at 48.1% abv this cask produced a mere 421 bottles.

2️⃣Sullivans Cove American Oak ex-Bourbon Single Cask Single Malt Whisky TD0387
Cask number TD0387 was distilled in Nov of 2012 and decanted in June of 2023, maturing at 10 years, and 6 months, in a single 200-litre, first-fill American oak ex-Bourbon cask. Yielding 286 bottles in total, this whisky is bottled at a strength of 47.5% abv.

3️⃣Sullivans Cove American Oak Second Fill Single Cask Single Malt Whisky TD0045
American Oak 2nd Fill Single Cask TD0094 was distilled in May of 2006 and decanted in Nov of 2021, maturing at 15 years and 6 months in a single, 300L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled at 47.5%, this cask produced 405 bottles.
This longer maturation results in a softer, less oak-forward whisky with a complexity and uniqueness that cannot be replicated.

4️⃣Sullivans Cove 16 YO American Oak Single Cask Old & Rare TD0134
Old & Rare American Oak is matured for a minimum of 16 years in American oak casks previously used to age bourbon. This single cask whisky displays incredible complexity and length of palate; rich, oaky and hugely textural while still retaining the unmistakable brightness and character of Sullivans Cove’s unique spirit. Winner of World’s Best Single Cask Single Malt at the World Whiskies Award 2018.

Continue with the Langtons 1st Classified Chardonnay chapter. Today JC Fine Wines comes with another 1st Classified wine- LEEUWIN ESTATE Art Series Chardonnay, Margaret River.

Leeuwin Estate's Art Series Chardonnay is a symbol of enduring Margaret River craftsmanship. Established in 1969 from a cattle farm with guidance from Robert Mondavi, Leeuwin Estate, home to the iconic Gin Gin clone, has played a pivotal role in shaping Margaret River's chardonnay lineage. Leeuwin's pristine fruit and meticulous winemaking set the standard for regional excellence, influencing fellow producers. The Art Series, adorned with commissioned artworks, represents opulence and ageability. Grown in moderate Mediterranean conditions on gravelly soils, handpicked fruit undergoes fermentation in new French oak, maturing for 11 months, with bâttonage enhancing texture and complexity.

Critics Tasting note: “A gentle mealiness and creamy almond quality rather than anything overtly toasty, there is a little buttery Brazil nut beneath, but also a certain coolness to the fruit, a hint of tangerine to peach and ripe pear. In the mouth it is medium-bodied and has very good freshness, the acid sparky and streaked with lime, that cuts through more buttery and tropical fruit flavours. Again there's salinity, and that plus the zesty citrus gives this fine definition, with a bit of grip too.”

In 2023, Chardonnay is trending upwards on major lists in Australia, which suggest a distinct rise in the popularity of Chardonnay wines in Australia, accompanied by a noteworthy growth in collection quantities.

JC Fine Wine is here with a round-up of the three Chardonnays that are rated as Langtons 1st Classified. Today is the most prestigious one, GIACONDA Estate Vineyard Chardonnay, Beechworth.

Giaconda's Chardonnay typically ranks among Australia's stratospheric best, with their ability to give Burgundy a run for its money.

The legendary Giaconda Estate Vineyard Chardonnay is renowned for its precision, generosity, extraordinary mineral structure and long-lasting quality. Established in Beechworth by engineer Rick Kinzbrunner, this south-facing vineyard, shielded from direct sun, offers a unique terroir. The vines are organically grown at 400 meters and thrive on mineral-rich granitic loam over gravel and clay soils. The grapes are hand-picked on cool mornings, then gently pressed and fermented in French oak barrels, and aged for 20 months in underground granite caves with stable humidity and temperature. Winemaking intuition and a deep connection to nature have ensured this Chardonnay's high status in Australian winemaking.

Critics Tasting note: A rich, toasty style, this vintage is gorgeously aromatic right off the bat, with concentrated melon, stone fruit, smoke, oyster shell and buttered toast, revealing polished oak. In the mouth, the flavors ricochet with intensity and richness. Beautifully balanced with length and poise, this is an indulgent wine now, but could cellar gracefully for another 12-15 years.

Critic tasting note: ”The aroma features fig, prune, pastry dough, honey and maple scents. On palate, Louis XIII offers long and intensely woody flavors; additional layers of flavor, including figs, dates, prunes, dried apricot and vanilla, are featured at midpalate. Finishes elegantly, warm, smooth and more oaky than fruity succulent.“

Romanee Conti arrives at JC FINE WINES~

https://www.jcfinewines.au/blogs/news/domaine-de-la-romanee-conti-a-collectors-handbook-for-the-esteemed-burgundy-wines

Domaine de la Romanée-Conti, or DRC for short, is Burgundy's most recognized and sought-after wine producer.
Located in the village of Vosne-Romanée in Burgundy, the winery sells wines from eight different Grand Cru vineyards. The most famous wines come from the eponymous Romanee-Conti vineyard and represent some of the most expensive wines in the world on average.
Scarcity is one of the key reasons why Romanee Conti wines are so expensive. On the secondary market, this wine can cost up to tens of thousands of dollars a bottle and consistently ranks at the top of Wine-Searcher's list of most expensive wines.
It is impossible to articulate the nuances and complexities of each wine even for Prestigeous wine critics. There is no alternative to experiencing these wines for yourself. If you are lucky enough to taste these wines, the advice is simple: drink them young, drink them old, and drink them anywhere in between!

Today we will continue to share the Langton 1st Classified Pinot Noir. There are 21 wines rated as Langons 1st Classified in the new edition, only three of them are Pinot Noir, and two in three are newly upgraded to this tier 1 list.

1️⃣-Bindi Block 5 Pinot Noir (Newly Classified as 1st)
Situated in the Macedon Ranges, this vineyard thrives in a vibrant ecosystem shaped by minerals and microorganisms crucial for grape growth. The unique terroir defines the wine's quality, reflecting the region's renowned excellence in Pinot Noir. Wines from this vineyard exhibit deeper fruit flavors, heightened spiciness, and earthy tones, with more pronounced tannins. They require additional aging to develop the same smoothness and delicacy as Bindi Original vineyard wines, but even when young, they offer a more profound experience.

2️⃣-Mount Mary Pinot Noir (Newly Classified as 1st)
Mount Mary Pinot Noir enjoys a prestigious reputation in the Australian winemaking scene, coveted for its limited yield and high demand. The winemaking process involves 8-10 days of fermentation and 16 months of aging in 25% new French oak barrels. Minimal processing and filtration preserve the wine's original flavor, enhancing its allure. With a light and pleasant body, smooth tannins, moderate cherry fruitiness, and subtle earthy undertones, it leaves a lingering finish with a hint of tea aroma. In comparison to Bass Phillip and Bindi, this wine stands out for its exceptional balance and delicacy, making it a newcomer-friendly choice.

Photos from JC FINE WINES's post 23/12/2023

Pinot Noir is also known as the most difficult kind of red wine grape to raise with a small and unpredictable yield. However, it’s widely recognized as one of the grape varieties capable of producing the finest wines. Compared to Cabernet Sauvignon and Syrah, Pinot Noir has softer tannins, a smoother and more elegant taste, with delicate red fruit aromas. It’s a red wine favored by many white wine enthusiasts.

There are 21 wines rated as Langons 1st Classified in the new edition, only three of them are Pinot Noir, namely Bass Phillip Reserve Pinot Noir, Bindi Block 5 Pinot Noir, and Mount Mary Pinot Noir. Among them, only Bass Phillip Reserve Pinot Noir has been at the top for decades.

This long-reigning member of the top tier in the Landon Classification hails from one of Australia's foremost Pinot Noir producers. It boasts excellent balance and rich aromatic intensity. A true embodiment of the Australian terroir, this wine harmoniously blends the essence of the vineyard with the craftsmanship of the winemaker. From the first pour, it delights with a wonderful fragrance, intertwining fresh cherry, strawberry, and plum notes, accompanied by hints of stem, nutmeg, and earthy undertones. The palate leaves a profound impression, featuring a lingering finish where velvety fruit seamlessly intertwines with delicate tannins.

🍷🍷Christmas Penfolds Food Pairing Guide!

Pairing food and wine is a skill many continuously refine. While personal taste preference is the ultimate deciding factor, here are some guiding principles to make this decision-making process easier.

1.Match Intensity
Bold wine for bold food, and more delicate wine for delicate food. Think Bin 28 Shiraz to your wagyu steak, or Bin 144 Chardonnay to your cured kingfish.

2.Balance the Heat
Spicy dishes can elevate the tannin profile, so when sitting down to a Thai curry, opt for a lighter red, such as Penfolds St. Henri Shiraz or the fresh and balanced Bin 407 Cabernet Sauvignon.

3.Sweet with Sweet
Sweet food makes wine taste less sweet. For dessert, select a wine with a higher level of sweetness, such as Penfolds Grandfather with your plum pudding.

There're more recommendations on JC JC FINE WINES official website, click https://www.jcfinewines.au/blogs/news/sipping-joy-a-merry-pairing-guide-to-penfolds-wines-this-christmas to discover more delicious pairings! 😍
