Blondie Raspberry Cheesecake Brownie

 INGREDIENTS
300g Butter
250g Block Whittaker’s 72% Dark Ghana chocolate
6 Free-range eggs
440g caster sugar
190g plain flour
100g cocoa powder
380g Whittaker’s Blondie White chocolate
1.5 Tbsp canola oil (or another neutral tasting oil)
450g Cream cheese, softened
100g Frozen (or Fresh) Raspberries
METHOD
Pre-heat the oven to 170° C fan bake.
Line a 20 cm x 30 cm high-sided slice tin with baking paper.
Melt the butter and 72% Dark Ghana chocolate together in a saucepan. Stir until combined and set aside to cool a little.
In a large bowl, use an electric be**er to whisk the eggs, and sugar together until thick and creamy.
Sift the flour and cocoa over the egg mixture. Using a spatula, stir until smooth and glossy. Add the chocolate mixture and mix until just combined.
Cheesecake filling: Melt together the Whittaker’s Blondie chocolate and oil together, stirring after each burst if using the microwave. Add the cream cheese and beat with an electric be**er until smooth.
Pour half of the brownie mixture into the slice tin. Dollop spoonfuls of the cream cheese mixture on top. Carefully spread the cream cheese evenly it covers the brownie mixture. Gently dot with raspberries and pour the remaining brownie mixture over the top, spreading it out so it covers the cream cheese mixture.
Bake for 40–50 minutes, or until just starting to set in the middle and a crust has formed.
Remove from the oven and allow to cool in the tin for at least an hour before cutting.
