Create the perfect balance of sweet and savoury in your next dish with this gorgeous strawberry & mint pesto salad 🙏🏼 And how could we not tear our creamy burrata over this? Such a stunning summer dish and so easy to prepare!

INGREDIENTS
2 punnets strawberries, chopped into bite-sized pieces
1 That's Amore Burrata
1 bunch mint
1/4 cup pine nuts
Olive oil
Salt & pepper

Pesto:
75g blanched almonds
85g mint leaves
30g parsley leaves, roughly chopped
2 cloves garlic, roughly chopped
100ml olive oil
Juice of 1 lemon

INSTRUCTIONS
To make mint pesto, toast almonds over medium heat for 5 minutes, stirring regularly. Once cooled, blitz in food processor until finely ground.
Add mint leaves to food processor, then parsley leaves and garlic. Pulse until roughly chopped. Add olive oil and lemon juice, season to taste with salt and pepper.
Blitz mixture again to form a smooth paste, adding a touch of cold water to help it combine, if necessary.
To prepare salad, spread a generous serving of pesto on a serving platter and arrange strawberries on top. Place burrata in the middle and drizzle with more pesto. Sprinkle with pine nuts and mint leaves.
Enjoy!

Brighten up your summer lunches with this super easy nectarine & Buffalotto salad! You can substitute in your favourite stone fruit as this recipe has a simple vinegar dressing that goes with any flavour 🤤 Paired with our Buffalotto, it's the ultimate fresh side salad!

INGREDIENTS
6 ripe nectarines, cut into wedges
1/2 cup That's Amore Buffalotto
Fresh mint leaves, torn

Dressing:
2 tbsp red wine vinegar
2 tbsp honey
1 tsp cracked black pepper
Salt

Whisk the dressing ingredients together and pour over the salad. Freshly grate Buffalotto over and top with mint leaves. Enjoy!

Here's our classic tomato & bocconcini salad - packed with lots of beautiful colourful veggies! Our Cherry Bocconcini make the easiest addition to these salads as there's absolutely no prep involved, just add to your heart's content 🫶🏼

INGREDIENTS
4 gourmet tomatoes, quartered
1 punnet of mixed cherry tomatoes, halved
1 red onion, thinly sliced
1 cucumber, sliced lengthways
Fresh basil leaves
200g That's Amore Cherry Bocconcini

Dressing:
1/3 cup extra virgin olive oil
4 tbsp white vinegar
2 tbsp honey
Salt & pepper

Whisk the dressing ingredients together and pour over the salad. Season to taste. Enjoy!
