Grass fed and finished Beef Short Ribs are one of the best braising cuts you can buy. When slow cooked this cut will give you super tender, fall off the bone beef, which is why it's such a popular cut for fine dining restaurants. Fantastic in a red wine sauce!
Beautiful grass fed and finished Beef Osso Bucco. This cut is perfect for braising, and is traditionally slow cooked in a tomato and white wine sauce. A big bonus when cooking with Osso is that you get to enjoy a big chunk of rich bone marrow in the centre of each piece - yum 😋

Our favourite way to cook these is to start them in a pan on the stove with loads of butter, gently crisping up on all sides, then transfer to the oven for the final stage of cooking. This gives them a really crunchy finish and ensures all of that buttery goodness soaks into every bit of the crumb!
Lamb loin chops a.k.a.the "T-Bone steak" of lamb. This cut is so juicy, tender and flavoursome. Sear these on a hot pan until they develop a nice crust and crispy fat, then serve with gravy and mash. A great winter dinner option!
Pork Scotch Steaks are such a versatile cut, ideal for casseroling and braising. If you don't feel like slow cooking, you can also tenderise and marinate them, then cook as you would a chicken steak or chicken thigh.

Our grass fed and finished Beef Marrow Bones are awesome for roasting. Cook these hot and fast by cranking your oven up to 220C and roasting for 15 - 20 mins until golden. Then, scoop the marrow out and enjoy on toast, or even mixed into your mashed potatoes!

Today is Tony’s 12th year at Cannings! I still remember the day when he walked into my Hawthorn store with all the confidence in the world and said “I’m lookin’ for a job”.
