VARIETAL : Yellow Caturra
PROCESS : Washed

Harvested manually, this fully washed Yellow Caturra lot is pulped on the same day as harvest, then undergoes fermentation in covered tanks for 12 to 24 hours. The beans are dried on concrete patios or under blankets until they reach 11 to 12% humidity, followed by dry milling to remove the parchment.
