🔵 You can’t go past a big nutritious bowl of Minestrone to warm you up from inside out!🔥 This is one of our favourites we know you’ll love. From Jamie Oliver.⬇️
Ingredients:
1 clove of garlic
1 red onion
2 carrots
2 sticks of celery
1 zucchini
1 small leek
1 large potato
1 x 400g tin of cannellini beans
2 rashers of streaky bacon
olive oil
½ teaspoon dried oregano
1 fresh bay leaf
2 x 400g tins of tomatoes
1 litre low salt vegetable stock
1 large handful of seasonal greens , such as savoy cabbage, curly kale, spinach.
100g wholemeal pasta
½ a bunch of fresh basil ,
Parmesan cheese to sprinkle on top.
Method 👇
✔️Peel and finely chop the garlic and onion. Trim and roughly chop the carrots, celery and courgette, then add the vegetables to a large bowl.
✔️Cut the ends off the leek, quarter it lengthways, wash it under running water, then cut into 1cm slices. Add to the bowl.
✔️Scrub and dice the potato. Drain the cannellini beans, then set aside.
✔️Finely slice the bacon.
Heat 2 tablespoons of oil in a large saucepan over a medium heat. Add the bacon and fry gently for 2 minutes, or until golden.
✔️Add the garlic, onion, carrots, celery, courgette, leek, oregano and bay and cook slowly for about 15 minutes, or until the vegetables have softened, stirring occasionally.
✔️Add the potato, cannellini beans and plum tomatoes, then pour in the vegetable stock. Stir well, breaking up the tomatoes with the back of a spoon.
✔️Cover with a lid and bring everything slowly to the boil, then simmer for about 30 minutes, or until the potato is cooked through.
🔵 Meanwhile...
Remove and discard any tough stalks bits from the greens, then roughly chop.
Using a rolling pin, bash the pasta into pieces while it’s still in the packet or wrap in a clean tea towel.
To check the potato is cooked, pierce a chunk of it with a sharp knife – if it pierces easily, it’s done.
✔️Add the greens and pasta to the pan, and cook for a further 10 minutes.
✔️Add a splash more stock or water to loosen, add basil leaves, then serve with a grating of Parmesan.🍲👌🏼

🔴 These healthy overnight oats are prepared in a jar to make a perfect breakfast when you're on the go. Great to prep ahead for your weekday breakfasts you can take with you. Topped with yoghurt and berries, everyone in the family will love them.
🔴 𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
125g (1 1/3 cups) rolled oats
2 tbsp chia seeds
2 tbsp pepitas
1 tsp ground cinnamon
1 tsp vanilla bean paste
1 1/2 tbsp nut butter (such as almond)
1 tbsp pure maple syrup
500ml (2 cups) almond coconut milk
130g (1/2 cup) natural yoghurt
120g fresh raspberries or frozen raspberries
🔴 𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦:
Step 1
Combine the oats, chia seeds, pepitas, cinnamon, vanilla, nut butter, maple syrup and almond milk in a large bowl.
Step 2

* 800g butternut pumpkin, seeded, p*eled, coarsely chopped
* 800g Kent pumpkin, seeded, p*eled, coarsely chopped
* 1 carrot, p*eled, coarsely chopped
* 1 brown onion, coarsely chopped
* 2 tbsp red curry paste
* 4 cups (1L) chicken stock
* 400ml can coconut milk
* 1 tbsp brown sugar
* 1 tbsp lime juice
* 2 tsp fish sauce
* 1/3 cup (80ml) coconut cream

🔷𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦:
◾️Step 1�Place the combined pumpkin, carrot, onion, curry paste, stock and coconut milk in a slow cooker. Cover and cook for 4 hours on high (or 6 hours on low) or until the pumpkin is tender and mixture thickens slightly. Set aside to cool slightly.
◾️Step 2
Use a stick blender to carefully blend pumpkin mixture until smooth. Stir in sugar, lime juice and fish sauce. Season. (To freeze now, see recipe notes below.)
◾️Step 3
Ladle the soup evenly among serving bowls.
Drizzle with coconut cream. Season.
