The practice of "maguro no kaitai," or tuna dissection, has been a part of Japanese culinary traditions for many years. Tuna has been a popular ingredient in Japanese cuisine for centuries, and the art of dissecting and preparing it has evolved over time. It's difficult to pinpoint an exact starting date for this practice, but it has been a fundamental skill in Japanese sushi and sashimi preparation for a long time. The techniques and tools used for maguro no kaitai have likely been refined and passed down through generations of sushi chefs.
