We are excited to present a high-end nigiri style featuring 10 different types of fish, carefully dry-aged to bring out the best flavors.

At our high table, you can experience a 7-course omakase with izakaya tapas, starting at €65.

It's difficult to pinpoint an exact starting date for this practice, but it has been a fundamental skill in Japanese sushi and sashimi preparation for a long time. The techniques and tools used for maguro no kaitai have likely been refined and passed down through generations of sushi chefs.

2. 18:00 A spot at our new chef’s table in the evening, collaborating withtakashima, for a special night of Balfegó bluefin tuna course dinner. - €50

Tuna auction and cutting is a traditional practice in many fish markets in Japan. It is both an art and a profession to bring the best and freshest of fish to the table.
