And just like that the last lift has come and gone. There were many hugs and handshakes, a few pictures and maybe a tear or two. We can’t be any more proud of what we have done and the community we built here. We’ve all grown together as lifters and friends. We thank you all for being a part of this.
The brick and mortar is gone, but Preston Iron Co. will live on.

Since we announced the closing of Preston Iron Co. messages, posts, and stories have been pouring in. It’s been overwhelming and emotional. You all have made us feel loved and we appreciate all of you.
We would like it if you could post a gym selfie or video, old or new. Open to all current and past members and visitors. Tag us in it so we can share it on our page with everyone.
You all have made us feel like we accomplished our goal of building a fitness family and we want to celebrate that through sharing your posts. And in doing this we can collect more memories.

It is with heavy hearts that as of May 31st, Preston Iron Co. will be closing its doors.
This was not an easy decision as we have put so much sweat and love into this place. Our dream was to take our passion for lifting sports and build something that would form bonds and camaraderie within this community. We feel that we achieved that. We produced good lifters, built friendships, and made a lot of great memories. We will be forever grateful for all of you who have been a part of this with us.
We know how awful this is. We are simply gutted. You are all welcome to continue to lift with us until the last day, however there is no guarantee all equipment will remain as it is all going up for sale.
Thank you from the bottom of our hearts. This has been one of the best, most rewarding experiences.
We will miss lifting with you.

⭐️This cottage cheese bowl recipe is fast, easy, convenient … and is even great for meal prep since you can make it ahead of time!
It’s loaded with protein. You can enjoy it as a snack or breakfast.
If you want, you can sub out honey for the maple syrup in the recipe.
✅TIP: For even more benefit, double-check the label of your cottage cheese to make sure it contains probiotics. Many do, but some don’t.
🍎Apple Cinnamon Cottage Bowl🍎
(serves 1)
* ½ cup (112 g) 2% cottage cheese
* ½ apple, chopped
* 1 Tbsp pecans or walnuts
* ½ Tbsp maple or agave syrup
* Pinch pumpkin pie spice
Place all of the ingredients in a serving bowl and stir gently. Eat immediately.
Note: This will also keep in the fridge for 3-4 days. To stop the apples from turning brown, sprinkle with lemon juice.

🥗This recipe – which includes this week’s food of the week, barley – is designed to be a FAST and EASY lunch or dinner.
But there’s a bonus! (Beyond the bacon.)
It’s also “meal prep” friendly. It’ll keep in the fridge for 2 days if you leave out the avocado. When you’re ready to eat it, just stir in the avocado.
🥓Bacon & Shrimp Barley Salad 🍤
(makes 4 servings)
* 4 strips bacon, chopped
* 2 cups (480 ml) water
* 1 cup (140 g) quick-cooking barley
* 1 lb (450 g) peeled cooked shrimp, tails removed, chopped
* Juice of 3 limes
* 2 cups (300 grams) grape tomatoes, halved
* 1 small onion, finely diced
* ½ yellow bell pepper, diced
* ½ cup (10 grams) chopped fresh cilantro
* 1 Tbsp extra-virgin olive oil
* Freshly ground pepper, to taste
* 1 avocado, peeled and diced
In a saucepan over medium heat, cook the bacon until crispy. Carefully remove from the pan to drain on paper towels or a wire rack. Drain fat from the pan.
Add the water to the pan and bring to a boil. Add the barley and lower the heat to a simmer, and cover the pan. Cook until done (the water will be absorbed), about 10-12 minutes.
Chop the cooled bacon and set it aside.
When the barley is almost done, combine the shrimp and the lime juice in a large bowl to let the shrimp marinate slightly. Stir in the cooked barley and let it stand for about 10-15 minutes so it can absorb the lime juice.
Stir well and add the tomatoes, onion, pepper, cilantro, bacon, and oil and gently stir to make sure everything is well coated. Stir in the avocado and add a few “grinds” of pepper and serve. 👩🍳

Easy Sautéed Mustard Greens
👩🍳This week’s recipe will actually work with just about any green you want – but we’re devoting it to our food of the week, mustard greens.
Serve this as a side dish with fish or chicken. Drizzle the cooked greens with a small amount of vinegar – apple cider or balsamic would be perfect.
🥬Simple Sautéed Mustard Greens 🥬
(serves 4)
* 2 Tbsp olive oil
* 2 garlic cloves, minced
* 2 bunches of mustard greens, chopped and stems removed
* Sea salt and freshly ground pepper to taste
* ¼ cup (60 ml) vegetable stock
* Dash of hot sauce
* 1 Tbsp stone-ground mustard
In a large pan, heat the olive oil over medium heat. Add the garlic and sauté for about 30 seconds.
Add the mustard greens and season with a small amount of salt and pepper, turning constantly to wilt. When the greens have wilted, add the stock and stir well. Bring to a simmer and let cook for about 5 more minutes.
Remove from the heat and add the hot sauce and mustard, stirring well. Enjoy!

Kiwi Salsa
👨🍳This quick & easy salsa is a mouth-watering addition to just about any chicken, turkey, and fish dish. You’ll love it on fish tacos!
The only prep it takes is dicing the veggies and fruits.
🥝Kiwi Salsa 🥝
(makes 6 servings)
* 4 kiwis, diced
* 1 small tomato, diced & seeded
* ½ yellow bell pepper, seeded & diced
* 1 small onion, diced
* 1 jalapeno pepper, diced
* 2 Tbsp lime juice
* 1 Tbsp olive oil
* 1 tsp honey
* 1 tsp curry powder
* Salt & pepper to taste
* Dash of your favorite hot sauce (to taste)
Mix together all the ingredients in a bowl and refrigerate for at least one hour before serving. Taste and adjust seasonings. DELICIOUS.

Avocado Oil Vinaigrette
🌟Sauces and dressings can turn a plain meal into something “extra.”
This very simple (and good-for-you) vinaigrette contains this week’s food of the week, avocado oil ... and you’ll want to add it to your list.
It’s obviously great as a salad dressing ... but it can also dress up just about any veggie side dish.
🥑So Simple Avocado Oil Vinaigrette 🥑
(makes about 3 servings)
* 1 Tbsp apple cider vinegar
* 1½ Tbsp Dijon mustard
* ¼ cup avocado oil
* Salt and pepper, to taste
Whisk together the vinegar and mustard in a small bowl.
Keep whisking as you slowly pour all the avocado oil into the mixture. Taste and season with salt and pepper to taste. Enjoy!
