Sushi Bake for supper. No real recipe. Just sushi rice on the bottom with seasoned rice vinegar, then a couple sheets of nori, then a mixture of cocktail shrimp, imitation crab, and air-fried salmon with mayo, soy sauce, and sesame oil. I've got leftover shredded chicken that would be perfect for this salad. I'm also thawing out some ground beef for taco salads so we are set for a couple meals this week. The Southwest Ranch dressing is delicious!

Adding some of the new Dilly Honey Mustard dressing mix into my egg salad for lunch tomorrow. I have tried it as a dressing yet - you just whisk it into some mayo, apple cider vinegar, and liquid honey (with a splash of pickle juice if you like!) It’ll be perfect for summer salads!

Do you like cooking on the weekend, or is a good time to "clean out the fridge" and use up whatever is hiding in there? I got a couple fryer chickens on sale this week, and I'm pretty sure there's a bag of baby potatoes at the bottom of my crisper drawer that should probably get used up, so I think I'll try out these two recipes (links in the photos). Should have enough leftover chicken to make another meal tomorrow - maybe toss it with some pasta and veggies with cheese on top.
