This Pink Bourbon Super Coffee is a beautiful bean that produces enticing aromatics and delicious fruity and floral notes of pineapple, mango and orange blossom.
Our very own Cleo used this coffee at the Brewer's cup competition run by in Vancouver earlier this year. Cleo came in 5th in all of Canada, showcasing the beauty in this bean. Also, Rowe, one of our managers at Fahrenheit, used this same coffee at the Barista competition in Montreal in March.
THE PROCESS: DOUBLE ANAEROBIC FERMENTATION W/ THERMAL SHOCK
In terms of technology, all the equipment and machinery is designed by Wilton Benitez himself, assembled in the farm by him with the help of his brother.
The use of bioreactors and specific microorganisms for controlled fermentation coupled with a constant control and monitoring of factors such as temperature, pH, brix degrees and electric conductivity make El Paraiso 92 ́s coffee to stand out from the rest and offer a value added like no other. All this allows the producer to have distinct, unique, and standardized profiles and notes.
Drying machines at the farm don’t use fossil fuels and only need moderate electric energy for their operation, avoiding greenhouse gas emissions.
The processes applied to all the coffees start with a careful and strict selection, sterilization, and coffee cherry profiling. Subsequently, the first controlled anaerobic fermentation phase initiates by adding a specific microorganism for each process. Later on, the coffee is pulped and then subject to a second fermentation phase. When the second fermentation phase is done, a thermal shock process is carried out through hot and cold-water shots in an effort to improve and boost the organoleptic characteristics of the coffee.

Finca Las Flores is one of five farms in the Acevedo region that work in a collaborative effort to improve development and innovative processing for better coffee. This community of farms includes Las Flores, El Diviso, La Cordiller, El Triunfo, and La Maria. Through a washed process, the cherries are picked at an optimal harvest (22 degrees brix) and through advanced processing techniques held in permeable polypropylene fiber bags for 18 hours, thus beginning the cherry oxidation. After transferring to 200L sealed plastic barrels without water for 36 hours, the cherries were floated to remove impurities and inferior particles. Pulping began with a return to plastic barrels without water for 48 hours of further anaerobic fermentation. The final mucilage is then removed through thermal shock processing (washing of the coffee with water heated at 35 degrees Celsius). Drying occurs for 12-15 days after on raised beds below a solar parabolic shade canopy, protecting the complex quality from direct sun exposure.

This lot was produced by the Gubata Farmers’ Group in tandem with Ture Waji and his company, Sookoo Coffee, a high-profile producer and exporter of organic specialty coffee. Hand-harvested cherry cultivated by growers in the Gubata Farmers’ Group is delivered to the Gubata Farm’s washing station located in East Guji, Shakiso woreda. At the mill, cherry is sorted and then spread on raised beds to dry, raked frequently to ensure consistency. The drying cycle completes in 2-3 weeks.
Farming methods in Guji remain largely traditional with most farms organic by default. Few steps are mechanized, even during processing. Coffee is typically intercropped with beans, peas and enset (a wild African banana relative used in porridge and bread). In the past decade, Guji earned recognition as a distinct coffee origin from its neighbors Sidamo and Yirgacheffe. A rugged and steep terrain supported by warm days and cool nights contribute to Guji’s reputation for unique profiles and exceptional quality.
The beautiful, bright Colombia Finca El Paraiso 92 is back. A fan favourite with tasting notes of orange, watermelon, lychee, cashew, we are excited to bring this back into our hoppers and retail shelves.
Paraíso 92 is a family farm that uses highly innovative farming systems such as terraces, drip irrigation, shading and laboratory nutrition count aimed to produce a unique coffee. Paraiso 92 has a processing plant, microbiology lab and quality lab.They are able to produce coffees through different processes such as washed, Natural, Honey and anaerobic coffees (single and twice fermentation).

A NEW ETHIOPIA BEAN IS COMING SOON!!!
Kore is the village, or kebele, where this coffee is grown and processed, in the Kochere "district" or woreda within Yirgacheffe. Kore is about 25 kilometers from the center of Yirgacheffe Town. Kochere is southwest of the town of Yirgacheffe and near a little village of Ch'elelek'tu. Kochere coffees have a strong fruit tea-like note that comes along with the citrus and stone fruit. The coffee is picked and delivered to the Boji washing station, depulped within 12 hours, and washed using spring water. The soils in this region are red-brown clay soil, about 1.5 meters deep.
Coffees in Ethiopia are typically grown on very small plots of land by farmers who also grow other crops. The majority of smallholders will deliver their coffee in cherry to a nearby washing station or central processing unit, where their coffee will be sorted, weighed, and paid for or given a receipt. Coffee is then processed, usually washed or natural, by the washing station and dried on raised beds.
The washing stations serve as many as several hundred to sometimes a thousand or more producers, who deliver cherry throughout the harvest season: The blending of these cherries into day lots makes it virtually impossible under normal circumstances to know precisely whose coffee winds up in which bags on what day, making traceability to the producer difficult. We do, however, make every available effort to source coffee from the same washing stations every year, through our export partners and their connections with mills and washing stations.
Typically farmers in this region don't have access to and therefore do not utilize fertilizers or pesticides in the production of coffee.
