Ethiopia Banko Gotiti
TASTE PROFILE
Grapefruit - Apricot - Guava
Coffee Story
Grown by members of the Banko Gotiti Cooperative on family-owned farms in the southern district of Gedeb, this naturally processed coffee is known as some of the best-selected lots in Ethiopia. The natural or traditional processing method is how they’ve processed coffee for centuries in Ethiopia and it hasn’t changed too much over that time period. These coffees are sun-dried with the coffee cherries fruit left on the bean. The fruit pulp is not removed until just before export. Once carefully harvested, ripe cherries are immediately placed on raised beds constructed in such a way as to ensure proper air circulation and temperature control for an optimal drying process. The cherries are stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent and then transported to Addis Ababa where the coffee is milled and exported.

WINTER BLEND
TASTE PROFILE
Clementine - Toasted Almond - Mulled Plum
COFFEE STORY
This limited edition blend is a little token of brightness and warmth to run through these cold mid-winter days. This blend brings together two favourite regions, Huila in Colombia and Tarrazu in Costa Rica.
40% of the blend is made up of a Costa Rican lot that comes from Roger Urena's farm El Toño and is processed at his Santa Teresa micro mill using the white honey method.
60% of the blend is made up of a Colombian lot from The Grupo Asociativo San Agustin Los Cauchos, which is a smaller grower cooperative that formed in 2001 next to the mountains by the Magdalena River in San Agustin, Huila. These growers realized they had the potential for excellent coffee and have been working with the goal of improving each year since. They grow mostly Caturra and fully wash their coffees before drying.
