Hobo Folk Machine ✨

Over the past ten years, Kenny Likitprakong has gone from being a nomadic surfer and skateboarder and lover of cheap Bordeaux to a devoted student of viticulture and oenology…in between a lot of mezcal in Mexico, a few stays in Europe and South America. He ended up settling in Sonoma, back to where he grew up watching his father as a winemaker.

In 1998, he produced his first wine called Côte de Fumier, an experimental project. It was in 2002 that it all began with the creation of his first brand which he named, much to his father's dismay, Hobo Wine Co. The name Hobo refers to an itinerant and describes well the journey of its founder. The name was particularly appropriate as Kenny had no estate or vineyard.

Kenny Likitprakong is a winemaker who enjoys experimenting. His ideas and preferences for wine are constantly evolving. When you meet him, you realise that you are dealing with a thoughtful, precise, and transparent individual. His wines tell a story. They are a testimony to a place. The vineyards where the grapes come from are all managed according to a sustainable development philosophy. Without certification, they all follow the principles of sustainable, organic, or biodynamic agriculture. Although he uses modern techniques, he advocates a minimum of intervention in the winemaking process - all unfiltered and unfined - and he favours the indigenous yeasts of each vineyard. That and a colony of yeasts that have developed over time in his cellar have, of course, influence the identity of his wines.

Kenny's wines are available in consignment and at our restaurant 💫

The Chablis AOC from Domaine de l'Enclos grips us with its pure expression of Kimmeridgien terroir. The Bouchard brothers work their certified organic vines with the utmost care. Untitled from Villa Job

Untitled is a white Friulano (Tocai). For Alessandro, this wine is the symbol of their region, a work of art so unique that it cannot be renamed with an alternative name, simply calling it Untitled.

Maceration on skins for two days in concrete vats, releasing complex aromas without extraction. Notes of ripe yellow fruit mingle with those of white flowers in a long, mineral, and very sapid palate.

Domaine des Frères 🌱

Allow us to introduce you to : Valentin Bruneau first acquired his 11 hectares of vines in 2018, all on hillside in Chinon. Unlike most of Chinon where the soils are mainly composed of alluvial sands, the 7 plots of the estate are riddled with white and yellow tufa, with each plot vinified individually. Certified organic from the very beginning, the plots are worked using very light quads to reduce the use of tractors and limit soil compaction.

The whole winemaking process is carried out with the utmost delicacy. The grapes are handpicked at night to keep the berries as fresh as possible. The fermentations are done with indigenous yeasts in concrete vats, the aging is in neutral Burgundy barrels and the addition of sulphites is low to non-existent, depending on the sku.

Each wine is unique, emulating its own eponymous plot, yet all having in common a shining elegance that has become so specific to the estate.

It’s Müller time!

This Müller-Thurgau from Mosel has delightful aromas of peach, yellow apple and chamomile. A quarter is vinified by maceration and the rest by direct pressing, giving this cuvée a refined texture with light tannins. The finish is refreshing and enhanced with subtle bitterness. The slate and schist soils give this wine a bright minerality which only prolongs the enjoyment and drinkability throughout the evening.

Sicilian rebellion at its best! 🔥

Flavia Rallo inherited two vineyards in two diametrically opposed regions of Sicily. The first, on Mount Etna at almost 1000 metres above sea level. The second, old family vineyards close to the historic salt marshes of Marsala. From the vine to the vinification, the winery has a no intervention philosophy. Their goal is to let the two terroirs express themselves through pure and natural wines. Flavia only bottles 1 litre, because 750 ml is just not enough!

Domaine Bulliat 🌱

A fan favourite in the market with his crisp Beaujolais blanc and juicy Gamay, distinguishable by their sketch drawn labels.

Loïc Bulliat is a seventh generation winegrower at the family estate. Their vines are now spread over 28 hectares under eight appellations including the five crus: Morgon, Fleurie, Chénas, Chiroubles and Moulin-à-Vent and under different climates.

Concern for the environment, respect for nature and the desire to express the terroir guided the Bulliats towards conversion to organic farming for the entire estate in 2010. The soil is mainly dominated by granitic formations with a layer of decomposed granite called "gore" which creates acidic, poor and filtering soils. All the grapes are picked by hand. In the cellar, the winemaking remains traditional with semi-carbonic maceration in stainless steel vats and ageing in barrel or amphora depending on the vintage.

Domaine Clair Obscur, Burgundy

Jennifer and Pierre Clair cultivate 3.5 ha of vines in organic and biodynamic agriculture in the small village of Corpeau, at the southern end of the Côte d'Or. The vines that were taken over from Pierre’s grandfather in 2006 are grown in the appellations of Beaune, Maranges, Hautes-Côtes de Beaune, and Bourgogne.

Each cuvée is vinified with great care, bringing out the unique character of each plot. There is no temperature control during fermentation. The reds are all vinified from whole clusters without crushing, bringing finesse and freshness to the estate's wines. The whites are made from both whole clusters and direct pressing depending on the cuvée. Aging is done in old Burgundy oak barrels for at least a year for greater aromatic complexity.

The wines of Domaine Clair Obscur are fine, elegant, and vibrant. Worthy of the recognition as some of the great wines of Burgundy.

Staffelter Hof - Little Bastard 🔥

Jan Klein has affectionately chosen the cuvée name, Little Bastard, as it’s a blend of Riesling, Müller, Muscat and… Sauvignon blanc, a rather unusual variety in the Mosel Valley. The wine itself has a bold, vibrant bouquet with pronounced notes of ripe apricot and peach, interwoven with hints of citrus zest and a touch of tropical fruit. Floral nuances add a delicate layer of complexity, creating an intriguing fusion of fragrances.

Crossing provincial borders 🍁

Plus Petit Que from Domaine Bergeville in North Hatley, Québec.

« Le Plus Petit Que was never planned. In 2019, we were creating our first reserve wine to be kept under low pressure in magnum bottles. This formulation was destined for future Intégrale vintages, following traditional Champagne customs to add consistency and complexity to wine composition by blending in previous vintages. When testing the final pressure, our team was so enchanted by the taste that we knew this wine, just as it was, had to be shared with the outside world.

In the glass, the slightly cloudy straw yellow colour glows with a silver sheen. Pineapple dominates a very expressive bouquet with notes of pear, white flowers and yeast. On the palate, its creamy and delicate effervescence is charged with a surprising energy. Very dry, this crispy white offers a straight and tense finish, marked by a subtle bitterness. Our thirst-quenching bubble par excellence! »

Domaine Chapelle from Santenay

Fourth generation family run estate. In 1923, they were the first in the commune of Santenay to bottle their wine as opposed to selling to merchants, which was typical in the region. Today, the estate is on 20 hectares of vines spread over the Côtes de Nuits and the Côtes de Beaune. In 2002, Yannick Jacrot took over as vineyard manager and initiated the transitionto organic farming. The estate became fully certified by Ecocert in 2009.

In the cellar, natural yeasts are used for fermentation and sulphur is reduced to a minimum. The estate produces wines from several prestigious appellations: Premiers Crus de Nuits-St-Georges, Aloxe-Corton, Chassagne-Montrachet, Santenay, as well as regional wines such as Hautes-Côtes-de Beaune and Bourgogne Aligoté. Like its neighbours, 90% of the wine produced is red.

Champagne Bonnet-Ponson ✨

Non-Dosé Rosé Champagne AOC 1er Cru from Bonnet-Ponson. Made from saignée Pinot Noir, Meunier and Chardonnay grapes from 3 plots of Champagne's 1ers Crus: Chamery, Vrigny and Coulommes-la-Montagne. Cyril blends the juice with his red Chamery, a 100% Pinot noir Coteaux-champenois. At least 4 years cellar ageing to refine this characterful cuvée. Nose of fresh red berries, with a hint of citrus and spices. Superb balance between freshness and vinosity, supported by a crisp mid-palate of stone fruit and raspberry. The finish lingers on vibrant notes of citrus and red berries.

Querce Seconda 🌱

Assisted by his wife Linda Sandkvist, Niccolò Bernabei is the second generation to work the vineyards of Querce Seconda. The family estate covers eight hectares of Sangiovese vines, located between the towns of San Casciano Val di Pesa and Montespertoli.

Although organic farming methods have always been used, they have only been certified since 2001. In their little corner of the northernmost part of the Chianti Classico region, amidst green vineyards and hills of olive orchards, they grow a healthy production in harmony with the environment.

In the cellar, they work with natural yeasts in order to let the terroir speak for itself. The wines are matured in old tuns and minimal amounts of sulphur are added only before bottling. The result is expressive and characterful wines within the Chianti and Toscana appellation.

Trévallon - Alpilles 2019

In the south of France, in the town of Saint-Etienne-du-Grès, between lavender fields and olive trees, a few steps from Saint-Rémy-de-Provence on the northern slope of the Alpilles, is Domaine de Trévallon.

Back in 1950, Jacqueline and René Dürrbach fell under the spell of the Alpilles and bought the Mas Chabert. The two artists were close to the painter Pablo Picasso, for whom Jacqueline Dürrbach created tapestries. About ten years later they expanded by acquiring the neighbouring property, which bears the lovely name of Trévallon. Trévallon for three valleys. It’s a property whose land is white, rough and dry and consists mainly of limestone pebbles and blue marl. Walking in the scrubland with his son Eloi, René already knew at the time that this place had potential to make exceptional wine.

Today, the vineyard extends over 17 hectares in this environment whose soil outcrops limestone between scrubland, holm oaks, olive trees, almond trees, thyme and rosemary... it’s simply stunning and the smells are intoxicating!

In the cellar, it remains very minimalist and always with native yeast.

Not complicated, 2 cuvées per year:

A white and a red.

Alpilles 2019 ✨

On the eye, the colour is intense, showing lovely deep carmine red with purple hints.
On the nose, it is powerful and beautifully elegant, marked by very ripe red and black fruits, against a background of white pepper and liquorice spice, very characteristic of Trévallon.

The palate is smooth and ends on a long, lovely finish showing very ripe and refined tannins of very high quality.

The balance of freshness, tannins and richness suggests this great wine will keep for at least twenty years.

I FORESTIERI

New to the Ontario market! Fresh out of Alta Maremma in Tuscany, Dario Marinari and Ezequiel Allassia bring us, I Forestieri. After mastering their craft at a number of larger estates throughout Italy and France, the two “forestieri” (foreigners in Italian) discovered old vines ranging from 250 to 600m in the hills of Roccatederighi and Roccastrada. Most of them abandoned, the plots lie on a variety of terroirs (schist, clay, sand, limestone, etc.)

Natural fermentation and maturation are carried out in concrete vats or amphorae. The reds are vinified in whole bunches, a rarity in the region. Like the ancient Tuscan growers of the region, white grape varieties are sometimes blended with reds, which brings a beautiful aromatic quality.

The hard work of the two friends is of great finesse. The result is wines that are balanced, complex and full of energy.

Balf Sopron Kekfrankos

Balf is a small village on Lake Neusiedl in Hungary known for its mineral rich soils. It is from this that Weninger's Kékfrankos draws its energy. Natural and pure, textured and vibrant, this Hungarian Blaufränkisch emanates black and red cherries. It offers elegant acidity and velvety tannins with plenty of fruit and minerality on the finish. As with all Franz's wines, this is a sure bet.

A brilliant, flawless biodynamic wine that can be enjoyed by both novices and connoisseurs 👌
