Wow! I took some time today to look back at my first post in early 2014... it’s fun to see how much I’ve changed even through posts ✨
Food boards are all about what I love:
1️⃣ Education
2️⃣ Creativity
3️⃣ Food
Here’s what I make sure I have: 🤍
PROTEIN: in this case it’s nitrate free kielbasa, boiled eggs and hummus ✨
VEGGIES: wishing I had more but this board has carrots cauliflower and pickles✨
FATS: needed 😍 I have cashews, olives and energy bites (peanut butter, flax seed and dark chocolate)✨
FRUITS: strawberries, blackberries and kiwi✨
MISC: cheese (I usually like to use a Brie or goat cheese), grainy mustard and whole grain crackers ✨
🥰The board you see here is the “Leftovers in my Fridge” Board ! And those energy bites ? It took me 5 minutes to whip up ✨
Remember that food in its simplest form is what the body craves and once you give yourself the nutrients you require you can have some less healthy treats more often than you this

✨3 Ways to BOOST Energy as we go in to Autumn✨
Apparently all the Blair Waldorf vibes 🍂 happy September to YOU
As we get in to this change of season, energy can fall off for a few reasons:
1️⃣ We lose our natural source of vitamin D ☀️
2️⃣ The days get cold and we instinctively crave refined carbs
3️⃣ It’s harder to enjoy fresh air walks in the cold and we opt to stay cozy in doors
So! Here are my 3 tips on making sure energy is UP throughout the next few months:
💥 Take vitamin D (at least 3000 IUs)
💥 When you have refined carbs pair with green or red/ orange veggies
💥 Suck it up and get fresh air EVERYDAY !
The last one is something that I NEED to work on … because I love how I feel in this photo and want to keep that vibe up throughout the season

✨Friday Foto Dump - ft. Farm✨
What a way to dive in to these fall feels 🍂🍁🌾
Often - I forget to make time for EXPERIENCES
🍂 Work can be overwhelming
🍂 Kids can be overwhelming
🍂 The world can be overwhelming
… and all of this fear sets in
Making time for enjoyable experiences (does NOT have to be a full on vacation away!) can change mindset and mental health for the better
That helps me with:
🌾 Understanding what life I am aligned with
🌾 Making time for healthy practices (meal strategies and movement for the week)
🌾 Staying focused on gratitude especially when life seems to be crashing down
What are some of the experiences you have that change your mindset ?
✨You need 30g fibre a day - but what does that look like?✨
On average adults eat 10 to 15 grams of total fiber per day - and we need at least 30g!
There are so many health benefits to fibre :
⭐️ Helps maintain bowel health
⭐️ Lowers cholesterol levels
⭐️ Helps control blood sugar levels
⭐️ Aids in achieving healthy weight
⭐️ Helps you live longer
But how the heck do we get more in our every day?!
💚 Veggies
💚 Fruits
💚 Nuts
💚 Seeds
💚 Beans / Lentils
💚 Whole grains
So basically vegetarian is so freaking beautiful for fibre !
This day brought me 35.5g of fibre 👍🏻 what does your day look like ?
✨Why don’t we talk about FIBRE more ?✨
According to the American Journal of Lifestyle Medicine:
“an estimated 95% of American adults and children do not consume recommended amounts of fiber”
95% …. 95%! What does this mean when we don’t get enough ?
Well a good consumption of fibre is correlated with:
✅ Good bowel health (SO IMPORTANT)
✅ Lowering risks of certain cancers
✅ Promotes heart health
✅ Beautifully balances blood sugar levels
…so a lack caused a ton of issues
With 95% of us NOT getting the recommendation (25-35g / day) …
⭐️or how I like to remember 30g minimum ⭐️
…it’s really imperative to understand how to ADD fibre in a healthier way

First … shout out to who knows how to do plant based food
ALL of the food in these photos are naturally:
☑️ Gluten free
☑️ Dairy free
☑️ Refined sugar free
☑️ Plant based (no animal meat)

…. Literally the definition of nutritious and delicious 😋
Here’s what’s in the pictures ! From what I can remember - some of these meals are so intricate I won’t do it justice:
1️⃣ Zucchini lasagna
2️⃣ Veggies +
3️⃣ and
4️⃣ Oatmeal bowl with berries, , mix and almond butter
5️⃣ Spirilized salad : cucumber, zucchini, carrots, cilantro, olives, greens, avocado, cherry tomatoes, sweet potato chips, cashew “parm” and two dressings that were to die for
6️⃣ Sweet potato, asparagus and pepper tart with a pea coulee
7️⃣ Avocado and Oyster Mushroom Ceviche
8️⃣ Oat groat risotto with coconut kefir and edible flowers
9️⃣ Blueberry cashew cheesecake
🔟 “Snickers Bar” with Coconut whipped cream
No bloating, no heaviness and beautiful digestion - feeling like I need to work harder to eat more and more often like this 🤍

Real, homegrown, whole food is naturally nourishing
There are so many opinions out there about nutrition - to the point that it gets beyond frustrating
I put my energy towards LONG TERM goals, sustainable health choices and happiness
🚫 Counting calories WORKS for the short term - I have yet to meet someone who is excited to count everything they consume
And on another note a calorie is not a calorie is not a calorie
🚫 Consuming a ton of natural sugars WORKS when you are trying to get off of the refined stuff - but sugar is sugar and it will get stored as some sort of fat to be used later when you over consume
🚫 Avoiding all fats ... But your energy will continuously crash, you will not feel full for a long period of time and your skin hair and nails will really get affected m
🚫 Under eating protein ... I feel like this happens unintentionally. It’s something that I make sure people understand day 1!
Unlearning and listening to how my body responds to foods was the best thing for my health - and it’s the foundation of my coaching

START SIMPLE, START SMALL, JUST START 🤍
✨Here it is …✨
I was traveling and found myself lethargic one morning - long story short my appendix had BURST 💥 and left for 2 days
Do I know how I survived that ? No , but that scary experience changed my life
🔄 I had to go on rounds of antibiotics
🔄 I lost a ton of weight
🔄 I remember being at the point where I wasn’t afraid of dying (peaceful)
So the months / years following I developed :
💥 Digestive issues (bloating, pain, indigestion)
💥 Massive sugar cravings and weigh gain
💥 Mood issues (depression was the worst)
💥 Irregularity in all areas of life
BUT ! The fact that I was on my second life always stuck with me - till one day …
I was watching a program about exercise and nutrition and something just clicked
FAST FORWARD a few years —>
⏩ Gut health improved massively
⏩ Bloating stopped and weight loss happened so naturally
⏩ Sugar cravings managed
⏩ Mood improved SO much!
Why do I show up every day? Because when I look back to where I was and where I am now I almost start to cry (happy cry)
Every single day - when you break it down - you can make a change that will create a better tomorrow

✨3️⃣ Things you didn’t know about Zucchini✨
so grateful to have garden fresh veggies this time of year! And boy are the zucchini coming in hot
at this point when I get a Zucchini that’s this large I’m making zucchini bread. I’ll explain a little later 🥰
here are three things you probably didn’t know about zucchini:
1️⃣ One zucchini is called a zucchina
2️⃣ The bigger the zucchini, the less flavour
3️⃣ The darker the zucchini, the more nutrients
so because of the size the flavour of the zucchini will be a little bit more mild, perfect for zucchini bread!
✨What you may be missing when making your Meals✨
Who doesn’t enjoy a good sandwich?! This one has:
- Sourdough bread 🍞
- lettuce 🥬
- tomato 🍅
- chicken 🍗
- onion 🧅
- cheese 🧀

✨Anti-Inflammatory ZUCCHINI BREAD✨
⚡️ No gluten
⚡️ No dairy
⚡️ No refined sugar
Combine wet ingredients:
- 1.5 cups shredded zucchini
- 2 eggs
- 1/3 cup honey
- 1/2 cup coconut yogurt
- 1/3 cup olive oil
- 2 tsp vanilla
Combine dry ingredients:
- 1 1/2 cups gluten free flour
- 2 scoops collagen powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- pinch sea salt
Combine dry and wet and mix until just combined. Add 3/4 cup chocolate chips and pour into a standard loaf pan.
Bake at 350F for 35 minutes or until cooked in the middle.
