Just like that. She's written her final exam and finished 4 years of University. Couldn't be prouder of you Bayly. Such a hard time to stay focused and complete a challenging program in the best of times. Even in the absence of sports and all the social aspects of school that helped you thrive, you still pulled it off! My girls got herself a degree in Psychology and has been promoted to Management in her field. Not a bad start! Skies the limit for you Bayly. I know you'll lead with your heart and do meaningful work 💚😘😍

Shepherd’s Pie

Ingredients
• 3 medium sized sweet potatoes
• 1 lb extra lean ground turkey
• 1 large zucchini – diced small
• 1 whole Spanish onion – diced small
• 1 cup baby organic carrots – chopped small
• 3 cloves of garlic minced
• ½ cup tomato puree
• 1 tbsp tomato paste
• 1 tsp. ground savory
• ½ tsp ground sage
• ½ cup cashew milk
• 1 tbsp coconut oil
• Himalayan pink sea salt and fresh ground pepper to taste

Method
Bake sweet potatoes whole at 400 degrees for 1 hour or until tender when pierced with a fork.
Set aside and let cool.
Place 1 tbsp of olive oil in a large frying pan. Sautee onion, carrots and zucchini on medium high heat for 3 minutes then add garlic. Sautee for 2 minutes
Add ground turkey and continue to cook until the meat is browned then add the sage and savory. Add in tomato paste and puree, stirring well.
Turn down to a low simmer.
Cut semi cooled potatoes in half and scoop out the flesh into a large mixing bowl. Season with salt and pepper. Stir in coconut oil then add cashew milk. Puree with hand blender or mixer until smooth.
In an oven proof cast iron or casserole dish spread meat mixture evenly across pan. Top with sweet potato puree and spread evenly across meat.
Broil on high for 10 minutes and enjoy!

Love this super satisfying easy to make, one pan dish. I usually make this for myself when I'm flying solo and still want something quality. This can be shared or a dish that makes cooking for one easy with leftovers to reheat for a tasty lunch!

Low in calories and nutrient dense! Hope you enjoy it as much as I do :)

Shrimp Pasta with Roasted Red Pepper and Goat Cheddar

Ingredients

• 1 lb shrimp of choice -raw
• 1 package of Konjac noodles- drained and well rinsed
• 3 cups baby spinach
• 2 full roasted red peppers
• 1 cup diced mushrooms
• 1 whole zucchini- diced
• ½ cup grated goat cheddar
• 2 cloves garlic
• 2 tbsp olive oil
• Sea Salt and pepper to taste

Method

Take 2 tbsp olive oil in heated skillet and add in 2 cloves of garlic peeled and diced. Add in raw mushrooms and diced zucchini. Sautee for 2-3 minutes or until they start to brown. Add in raw shrimp and sauté until shrimp is fully cooked. Turn heat down to medium low and add noodles. Mix well and cook for another 2 minutes before adding in spinach and red peppers. Continue to stir over medium low heat until spinach leaves are cooked through. Plate and add grated cheese, salt and pepper. Serve hot.
