Happy National Mushroom Month 🍄

We love mushrooms here at Côte and we’re très proud to say that we always have at least one mushroom inspired dish on our menu. Currently: our mushroom bourguignon. Made with slow-cooked pieces of pulled shiitake mushrooms in red wine, with vegan bacon, baby onions, Chantenay carrots and potato purée.

We’ve also been cooking up a délicieux new mushroom inspired dish which will be joining us on the 10th October 👀 This means we’ll sadly be saying au revoir to our mushroom bourguignon so if you haven’t tried it yet, be quick!

What the French is a taco?

It’s this… a flour tortilla, piled with meat and cheese, folded into a rectangular packet, and then toasted on a grill.

We’ve filled ours with layers of slow-cooked caramelised onions, pulled Fable mushrooms and Reblochon cheese, which we’re serving with a chimichurri mayonnaise. This is the cult classic of French street food, with flavours inspired by South America.

We have arrived at our next stop along our journey of celebration across France. Lille – the picturesque capital of the Hauts-de-France region, and home to La Braderie De Lille, an annual flea market festival. Central to the festival is the iconic dish of Moules Frites where 500 tons of mussels are consumed over the weekend. Local restaurants even take part in a challenge to build the tallest Moules shell tower to earn the festival’s top restaurant award.

To celebrate, our executive chef, Steve Allen, has shared his top tips on prepping and cooking mussels for you to follow along at home. If you’re hosting a dinner party this summer, this dish is bound to impress.

We’re in Bordeaux today, following France’s journey of celebration. Bordeaux is one of France’s (and the world’s) most celebrated winemaking regions. So it was only right we gave you a chance to try a glass of one of the best wine’s the region has to offer, completely on la maison.
