A caffeinated speakeasy located in Edinburgh. We’re a new breed of speakeasy coffee shops. We're experimental, unorthodox, and occasionally eccentric.

What, Exactly, is the Caffé Latte?
Literally translating to "Coffee with Milk," it is typically served in 10 or 12 ounces. The beverage comprises of a double shot of espresso, hot steamed milk, and a thin layer of microfoam.
Often confused with the Cappuccino, Lattes are silkier in texture and give the espresso a higher dilution (therefore cutting through the strong taste). The origins of the Latte remain unclear, as it is such a popular drink around the world. We do know, however, that it first rose to popularity in Seattle, Washington (USA) in the 1980s.

What, Exactly, is the Cappuccino?
Usually served as 10oz or 12oz, the Cappuccino is made with a double shot of espresso, blended with steamed milk, and topped with glossy microfoam (and a dash of chocolate). Rich and slightly sweet on flavour, you will find very little acidity in this serve.
As always, timing of your coffee order is essential in Italy. Usually Cappuccinos are enjoyed in the morning, alongside a pastry.

What, exactly, is the Flat White?
Typically served as 6oz or 8oz, milk steamed into silky microfoam is stirred into a single or double espresso. With its stronger taste, Flat Whites tend to be favoured by drinkers who prefer the taste of coffee, without the bitterness. The origins of this drink are a hot debate, as both Australia and New Zealand claim to have invented it in the 1980s!

What, exactly, is the Cortado?
Short drinks, made with a 1:1 Coffee:Milk ratio; Cortados are strong, smooth, and perfectly balanced. Traditionally enjoyed as a double they can also be enjoyed as a single.
It's said that in the Early 20th Century Spanish coffee drinkers from the Basque Region started to enjoy "Café con Leche Pequeño" or "Small Coffee with Milk." This little drink traveled and was later adopted and made famous in Cuba! The Cortado (meaning "cut" or "shortened" in Spanish) is especially popular today in Spain, Portugal, and Latin America.

What, exactly, is the Espresso Macchiato?
The literal Italian translation of "Macchiato" is "Spotted" or "Stained." Thus, when you order an Espresso Macchiato, you are ordering an "Espresso Stained by Milk."
The time in which you drink certain types of coffee really matters to Italians, and Espressos are designated for the afternoon. Adding a dollop of milk foam helps to cut through the bitterness of the espresso. This is perfect for those who need a quick boost of caffeine, but prefer a bit of creaminess.

Coffee Serves: What, Exactly, is the...?
Long Black.
Often confused with an Americano, we're here to dissect the difference!
Long Blacks are shorter drinks (typically 6oz), where the espresso is poured directly over hot water. This process allows the underlying flavours of the coffee beans to open up, while retaining the thick creama on top. This makes for a more robust cup, ready to drink immediately.
The history around this serve is a bit muddled, but we do know that it started out in Australia after a small population of Italians migrated post WWII.

Coffee Serves: What, Exactly, is the...?
In which we dive into your favorite serves and tell you exactly what you're enjoying and where it comes from.
To kick us off, we look at the classic Caffé Americano. Easily enjoyed black or with milk, this cup retains the integrity of strong espresso, but with a higher dilution that most other serves.
The Americano was originally created during World War II, when American soldiers stationed in Italy found the taste of espresso quite harsh. Missing the comfort of their own Filter Coffee, they added hot water to the espresso and l, subsequently, brought the recipe home!
Typically you will see it served in 8-12oz quantities.

It's okay to not want coffee sometimes. We crave decadent hot chocolates, too!

Victoria loves a V60 Pour Over!
She says:
"When you find the right recipe for your chosen roast, the result is a wonderful balance of flavour and aroma that treats all of the senses. Patience is key for V60s and it reminds me that I can slow down my morning."
Victoria prefers coffee with notes of caramel, berries, and light citrus; which can be best found in Rwandan or Chinese origins.

As an Oat Flat White!
She tells us:
"My absolute favourite is an Oat Flat White. It is the perfect balance of the strong kick of a double shot of espresso, with the creamy smoothness of steamed oat milk, topped with microfoam that blends together with every sip. It's like a cozy hug in a cup, making it a perfect choice whenever I need a moment of comfort."
Michalina prefers roasts with chocolate, nutty, or caramel notes; which are best found in Columbian and Peruvian origins.
Flat whites are our most ordered beverage for a reason! Who else loves this classic? 🙋♀️

Her pick is an Espresso Nitro Brew.
She says:
"Steaming espresso with cold water and ice gives the drink a foamy consistency. The cold water bells to bring out sweeter notes in the coffee. No milk or sugar needed. It's like drinking a Guinness, but work day friendly!"
Beatrice prefers coffee with floral and fruity notes. "Funky is my Jam!"
You can best find these notes in Ethiopian and Honduran blends.

Gigi's pick is a Double Espresso on a Rock.
She says:
"Much like Whisky, the slower dilution and cooling using ice brings out more of the coffee bean's natural flavours, allowing you to enjoy the coffee as an individual as the roastery that offers them."
Gigi prefers coffee with more acidic and light fruity notes, such as lemon or peach. You can find these notes best in Ethiopian and Guatemalan origins.
