Hey, it’s me.
We are taking a wee break next week. Been a very busy start and we need some time to get some work done on the shop but also to switch off for 5 minutes (as if I’ll be able to do that 😂). Hope to see you this weekend. Its the banoffee special, back by popular demand. We probs won’t do it again….for a while anyway.

🍌 Banoffee Pie - Cross laminated pastry with custard, banana, shortbread, caramel and a white chocolate cremeux
🍦 soft serve ice cream with blondie pieces (or on its own as a vegan option) available from 11am-3pm
What a view 👀 we are considering doing a very small number of pre order boxes at the weekends. These wouldn’t be customisable so let us know how many pastries and which items you would like to see in a box.
For locals we are considering doing some separate pre orders where you would be able to come in 15 minutes before we open so you could order coffees too.
I dunno, this might not work/the logistics might be a nightmare but we are just thinking of ways to make things easier for you pastry creeps. Let us know your thoughts

Been tweaking things constantly. Little things like bulking time, very specific dough lock in temps and increasing mixing temp by 1 degree etc trying to adapt to the humid weather. Always room for improvement

🍦 Soft serve with morello cherry compote and white chocolate blondie chunks
🥐 peach, vanilla, lemon and honey compote with an oat crumble and crème diplomat on top of pistachio Frangipan. All inside our crispy laminated pastry.

We’ve done a lot of shuffling about and trying to adapt but we need a day to do a big clean down and clear out before a busy August 😅

It’s been super hot this week, rolling has been a nightmare but we’ve managed to get some decent results 🥐
We have loads of pastry for tomorrow so we hope to see you from 9am
Weekend Special will be a variation on this Eton Mess we made earlier in the week. Should be out around 10-10:30 after we whip up some Italian meringue to go alongside the pre baked meringue pieces
Wee note: We have a new till system at the shop so you can now see your total before tapping your card. It has a tip option….dont freak out, we are mostly takeaway so we aren’t gonna out you for clicking no tip. The panic on peoples faces sometimes 😂 if you do want to tip, that’s obviously very generous, I never take tips it all goes to the staff in the hope they buy me a “worlds best boss” mug, been waiting 8 years…
I can’t explain to you how busy it has been! We are still waiting on our second oven getting installed but we’ll have even more pastry than last weekend. Please come early to avoid disappointment.
Next week we will be quickly closing in on 200kg of pastry dough a week, easy breaking the 1200+ pastries, which doesn’t include off cut batches, cookies, cakes, blondies, puff pastry etc. That’s a lot of rolling! If you keep coming we will keep increasing our capacity as much as we can 👌

We’ve been open 2 weeks now but our croissant recipe has changed a good few times already. A few more tweaks left but this batch is looking good 👌

It’s quite the view….
Thanks again for today, we will be doing iced coffees until we get our machine fixed on Tuesday. This week we will be trying to increase production in the mornings but until then we do our first bake very early and then try to restock around 11 or 12. Focaccia sandwiches are usually ready around the same time.
Our pastry is getting better everyday as we get used to the space, the best is yet to come!

Another disastrous day 🥲 our coffee machine has broken and we can’t get it fixed until Tuesday so we won’t have any hot drinks Saturday/Sunday/Monday. Hopefully you’ll still come down and get your pastry fix.
I’m just as heartbroken as you, I’m up at 5am with no caffiene 😥 I’ll let you know if we manage to find someone who can fix it sooner
