Meet Miriam ‘Betty’ Perez Zelaya, the woman behind Finca Clave de Sol, and the producer of our latest single origin coffee!

Our Head of Coffee, Andrea, met Betty early last year and shortly thereafter began efforts to start working with her. Betty is a passionate advocate for regenerative organic agriculture, with decades of grassroots organising and educating in her community, and has been hugely influential in spreading this passion far beyond her hometown of Marcala, Honduras. Year one and we are already superfans!

Women of the Rwanda Sholi Cooperative - through our Female Producer Programme, we source 50% of our coffee from female-owned coffee farms, and donate 10p from the sale of this coffee to charities that advance women in coffee.

One of the key indicators of good coffee is the ripeness of the coffee cherries. ⁠
⁠
Cherries picked at peak ripeness have the most natural sugars, which results in sweeter and more complex cups of coffee.
⁠
However, coffee cherries often ripen at different times, even on the same branch, meaning most of the world’s best-tasting coffee must be picked by hand.
