🇪🇸 WHY IS IBERICO HAM SO EXCLUSIVE?
The magic of Iberico ham is in the details—from the breed of pig to their diet, to the delicate curing process that can take several years.
Here's what makes it so unique:
1. **Acorn-Fed Perfection:**
- The highest grade, *Jamon Iberico de Bellota*, comes from pigs that feed on acorns during their final months. The acorns (called "bellotas" in Spanish) give the ham its rich, nutty flavour and high oleic acid content, which results in a healthier fat profile, similar to that of olive oil.
2. **Meticulous Rearing:**
- Iberico pigs are raised with plenty of room to roam and exercise, which helps develop their unique muscle structure and fat distribution. This lifestyle, combined with a natural diet, contributes to the ham’s complex flavours and melt-in-your-mouth texture.
3. **The Art of Curing:**
- The curing process, which takes a minimum of two years, is an art form in itself. The hams are carefully monitored and dried in natural cellars, where temperature and humidity are controlled. Over time, this curing process enhances the ham’s depth of flavour, texture, and aroma.
