Stephanie Gregg | Culture Director
Steph’s journey at WatchHouse is a testament to passion, dedication, and growth—a perfect reflection of our people-centric ethos.
Joining us at the very beginning in 2014, Steph started as a barista in Bermondsey. Her talent quickly saw her transition to House Manager, and as we expanded, so did her responsibilities, becoming Operations Director in 2019, guiding day-to-day operations with a focus on growth and quality.
After returning from maternity leave in 2023, Stephanie embraced her current role as Culture Director, where she ensures our strong, people-first culture continues to thrive.
It’s the incredible moments shared with passionate people who make WatchHouse special for Steph and values the trust placed in her to drive the business forward. Her go-to coffee order is a classic filter, reflecting her simplicity and authenticity.
Lukas Haertel | Head of Production
Lukas exemplifies our commitment to quality at WatchHouse. For six years, he has been a key figure, instrumental in maintaining the high standards we are known for.
His journey began as a Front of House Supervisor at Old Tower Bridge, but his passion for coffee and commitment to excellence quickly propelled him to a role of Coffee Quality & Sourcing Manager before being promoted into Head of Production.
Lukas’s favourite memory is being part of the team that supported Davide Orazi’s victory at the New York Coffee Masters Championship in 2022, highlighting the talent and teamwork within our coffee community.
Patrick Weber | House Manager, Fenchurch St.
Having joined WatchHouse just over a year ago, Patrick has already made a significant impact. He began as a Barista at Maltby Street in March 2023 and quickly rose to House Manager, overseeing operations at our Fenchurch St. location.
Patrick is driven by a love for the people he works with, finding inspiration in both his colleagues and the vibrant community of customers.

Lucy Bond | US Operations.
Lucy joined WatchHouse in 2020, right as we were emerging from lockdown. Starting as House Manager, she quickly showcased her operational brilliance and moved into the role of Brand Standards & Training Manager.
In 2022, she transitioned to Head of Openings, where she oversaw the development, recruitment, and cultural onboarding for our international expansion.
A proud moment for Lucy was overseeing the launch of our first U.S. location on 5th Avenue, marking a significant milestone in our journey. She thrives on the challenges our growth brings and cherishes the talented team around her.
Her go-to coffee order? An oat flat white, no matter the weather.
Ted Longden | Senior Head Barista, Fenchurch Atrium.
Ted’s WatchHouse journey began three years ago when he joined as a part-time barista at our Tower Bridge House. His passion propelled him to Senior Head Barista at Fenchurch Atrium.
His proudest moment? Securing 3rd place in the UK Barista Championships.
Ted is all about mastering his craft, always eager to learn and grow. Classic in his choices, he favours an espresso or batch filter—proof that sometimes, simplicity is key.
Sheikh al Zehwan Obarey | Head Chef, Tower Bridge.
Sheikh brings a wealth of culinary expertise to his role as Head Chef at Tower Bridge. Since joining WatchHouse less than a year ago, he has infused our kitchen with creativity and precision.
His most memorable moment? The excitement of his first shift with the team in the new kitchen, setting the tone for the camaraderie that fuels their daily work. With a flat white in hand, Sheikh’s commitment to excellence shines through in every dish he creates.

Today marks a decade of Modern Coffee.
Ten. Years. It feels like yesterday that we opened the doors to our first House on the corner of Bermondsey. What began as a small space dedicated to quality coffee and community has grown into something beyond what we could have imagined — a collection of 20 Houses across London, Bath, and New York.
Through it all, one thing has remained constant: our commitment to Modern Coffee and you, the incredible community that has supported us along the way.
Whether you’ve been with us since the beginning or joined more recently, we want to share our deepest gratitude for your loyalty and support. WatchHouse wouldn’t be what it is today without you
Today is the highlight of this celebration as we participate in the annual Bermondsey Festival, returning to where it all started. We’d love to see you there, or at any of our Houses throughout this month, to celebrate together.

All week we’re serving up Edition 03 of our Rarities on batch in all Houses as part of our 10th Birthday celebrations, alongside our special birthday cake; Vanilla and strawberry spirale, featuring a vanilla financier, strawberry jam, and gianduja crémeux.
This Rarities edition is a Coco Natural Gesha from Los Rodriguez in Bolivia (see our previous post!), with notes of strawberry, white peach and jasmine.
A limited release of boxes are also available to buy in all Houses too, until they’re gone.

Since then we’ve grown into a community of 20 Houses across London, Bath, and New York City.

The Coffee.
Las Brujas, a Koyner family farm, is nestled in the picturesque region of Boquete, Panama. Boquete’s mountains create different microclimates, with some farms receiving Pacific winds and rain, while others get weather from the Atlantic and Pacific. This means each farm has its own unique flavour profile, like this Gesha with juicy apple and floral notes. The coffee was processed with precision, encouraging a high-quality fermentation while slowly drying the coffee.
The Farm.
Ricardo Koyner played a crucial role in transforming Panama from a little-known coffee origin to a world-renowned producer. A third-generation grower, his family emigrated from Canada in the early 20th century, initially growing coffee and vegetables before specialising in high-quality Arabica coffee. Today, Ricardo and his daughter Victoria, who studies biochemistry and applies it to coffee production, combine their expertise to create exceptional coffees like this one.
Coming in six carefully portioned 20g doses for optimal preservation and roasted to order, Rarities are shipped letterbox friendly for the best at-home brewing experience.
