Here is a beautiful COLD SUMMER VEGETABLE MINESTRONE WITH BASIL PESTO recipe from the wonderful who cooked this delightful dish for our customers and Islington Farmers Market a few weeks back and they LOVED IT!

Switch out ingredients for whatever veg is in season and enjoy. This is honestly so simple, refreshing, healthy and just delicious…a true celebration of the wonderful veg we grow in this country 💚

Ingredients (serves 4):
100g white onion
100g celery
200g carrot
150gr potatoes
250g courgettes
150g green asparagus
200g french green beans
200g purple broccoli
300g beef tomatoes
25ml extra virgin olive oil

For the pesto:
400g basil leaves
80ml extra virgin olive oil
20g grated pecorino cheese
20g grated Grana Padano cheese
½ clove of garlic
salt

Method:
Pesto: Blanche the basil leaves in boiling water and immediately cool down in iced
water. Drain and transfer into a blender. Add the rest of the ingredients and blitz until
combined.
Dice all the vegetables, around 1cm in size.
With all the peelings, make a stock adding cold water and boiling for about 30 minutes.
In a pot, sweat the onion, celery, and carrot with the olive oil until soft. Add the potatoes
and about 500ml of the vegetable stock. Bring to the boil, adjust with salt, and remove
from the heat. Let cool down.
Blanche one by one in salted boiling water, all the remaining vegetables until soft but
still with a bite and cool down in iced water. Drain and add to the already cold soup
base. Add more stock if needed, bring to the boil once again and allow to cool down.
Score the skin of the tomatoes, blanche in boiling water and cool down in iced water.
Once cold, peel them, remove the seeds and dice.
Complete the minestrone with the tomato and basil pesto, adjust with salt if needed
and serve at room temperature.

This month we celebrated 25 YEARS OF LONDON FARMERS MARKETS! This was a massive milestone for us and we were so delighted to share the celebrations with so many customers and stall holders at Islington Farmers Market where it all began in 1999.

We were joined by our friend and world renowned chef who has been a long time supporter and shopper at Islington. Francesco and his lovely family cooked a heavenly vegetable Summer minestrone which we shared with customers before all tucking into Birthday cake and chocolate brioche from and 🎂!

Thanks to all the old and new faces who joined us, to everyone who has chosen to shop with us and support small producers and businesses and of course thanks to all our farmers and producers who bring Londoners better, fresher, quality food every single week. Looking forward to the next 25 years! 💚

Know how your bread is made! You can find Aston's Bakehouse at many of our markets :-)

Even though we have been milling since 2013, a lot of our customers don’t actually know that! It all starts with the grain. Spelt, Rye and white varieties, all Organic, all supplied from local farms, arrive to the bakery in big bags (1 ton). They are then milled during the day in two stoneground mills - the Austrian mill deals with wholemeal flours (Rye, Spelt and wheat), while the French one stays on white (Miller’s Choice and Paragon). We use these grains because of their flavour - and believe this is what makes our bread so different. The by-products of the milling process are (where possible) incorporated back in our range. Semolina is used in the People’s Loaf, and also to dust baking sheets. Bran goes back into the flour (on the wholemeal range). The remaining chaff is given to a neighbouring pig farm. Nothing goes to waste! If you ever wondered why our white breads aren’t completely white, it’s because the mills are gentle on the grain, and unlike industrial mills, our stoneground white mill keeps all the nutrients in, which means keeping some of the bran too. Time for another trader focus and this month we would love to introduce you to the very wonderful BRAMBLETYE FRUIT FARM. Based in East Sussex Brambletye Fruit Farm are BIODYNAMIC growers and producers of some pretty special produce including mushrooms, apples, eggs, beetroot, kale, celeriac, fennel, berries and much more!

Brambletye’s honey is pretty special too! Their bees pollinate over 300 acres of organic apple and pear orchards in the High Weald of Sussex and Kent every Spring and the result is one incredible honey…get to market early to secure a jar of this magic.

It’s also impossible to visit the Brambletye stall at our markets and not pick up some of their incredible MUSHROOMS….from Oyster to Lions Mane they look like something from a fairytale book and the TASTE is just incredible. You will never want to buy a supermarket mushroom again after sampling a Brambletye mushroom.

Brambletye farm to strict BIODYNAMIC principles which means a higher level of sustainable, organic farming. Using crops that are kind to the land, and farming methods which do not harm the delicate balance of the earth. The produce is all pesticide free but in addition the healthy soil is full of microbes and good ‘gut bacteria’ meaning nutrient dense produce that tastes amazing!

MAY…we remind you what is in season?! It’s a gorgeous month full of all things colourful. Asparagus season is now in full swing and we are starting to see the first strawberries appear at our markets 🍓

Ditch the supermarket shop this month and come and pick up real, fresh, SEASONAL PRODUCE direct from the people who grow, produce or make it. Next up under the TRADER FOCUS spotlight is THE POTATO SHOP…growers of more than twenty varieties of potatoes every year on 35 acres of the best ground on the beautiful Morghew Park Estate in Kent.

They quite literally have a potato for every occasion; boiling, roasting, mashing, frying…for salads, BBQ, jackets or rösti. Their Blue Anneliese variety is a visual and taste sensation in any salad and the Charlotte variety on the BBQ is the perfect waxy delight. Ask their lovely stall holder at the market for advice on the right potato for you and they will be happy to help!

The humble spud…arguably one of the greatest foods on earth has been elevated to new heavenly potatoey heights by @ THE POTATO SHOP team. You can literally taste the love and passion in every comforting bite. Regardless of whether you are a devoted potato lover or not…all Londoners need experience this potato joy at least once in their lives.
