😱Have you ever seen these?😱

👉We are familiar with stainless steel tanks, amphoras, cement and oak barrels. Still, we bet you haven't heard of these unique stone fermentation vases!

Although looking experimentative and Avant guard, these are dated from medieval times.🏰 They were built in the 12th century and have 3 different levels, working as gravity fermentors.

is a bright and motivated producer in the Catalan Pyrenees in Spain. They have a strong philosophy of highlighting individuality, expression and quality, producing brilliant wines we love. 🔝🔝🔝

Stéphane’s consultant venture ‘Derenoncourt Consultants’ embodies a new generation of consultancy in viticulture and wine-making. Their philosophy is that there is no such thing as a ‘petit vin’. With a broad palette of clients, a huge amount of investment and a great deal of hard work, they are able to showcase many lesser-known terroirs, producing exceptional wines, each with a distinct personality. Stéphane’s personal property, Domaine de l’A, is a 10 hectares estate planted to Merlot (80%) and Cabernet Franc (20%) at Sainte-Colombe, to the east of St Emilion in the Côtes de Castillon.

🍷 Stéphane Derenoncourt, Graves Rouge ‘Château des Fougères’ is a 12.5 hectares property near La Brède, with vines ageing 10-30 years planted on gravel soils. 85% planted to red grapes. All vineyard work is manual. 14-16 months in French oak barriques.

The 13 hectare south-facing vineyard of Chateau Vrai Canon Bouché is planted with 70% Merlot & 30% Cabernet Franc. The terroir is clay and fossil-rich limestone soils on the top of the Canon Fronsac plateau. The vineyard is situated on a massive limestone quarry. The average age of the vines at Vrai Canon Bouché is 35 years, with a few parcels of old vine Merlot. The vineyard is planted to a density of 6,000 vines per hectare and is farmed using sustainable viticulture, as one would expect in a property consulted by Stéphane Derenoncourt. A great deal of effort is focused on the vineyard management. The soils are worked mechanically; de-leafing and crop-thinning are carried out as necessary. The grapes are always harvested by hand. Destemmed. Little intervention is required in the cellar. Everything flows through the use of gravity. The whole berries are placed in small thermo-regulated concrete vats for fermentation at 27-30 degrees C. 15-20 days maceration following fermentation. Natural yeasts. Malolactic in barrel. The wine is exclusively matured for 12 months in French oak barrels, 50% new and 50% 2 years old.

The 6.5 hectares property of Croix Lartigue is located at the high point of the village of Belvès de Castillon, not far from Domaine de L�A. Limestone base, gravel and some clay. Organic practices. Manual harvest. Fermentation via natural yeast in temperature-controlled, stainless steel tanks. �L�’Expression� was aged in �one wine� French oak barrels, with additional ageing on the lees for 6-8 months. Unfined, unfiltered.

Côtes de Castillon vs. Côtes de Bordeaux

🍷‘La Violette du Manoir’ is strictly selected old vine fruit (57 years of age) from a small 2 hectare parcel in the commune of St Genès de Castillon. Clay/ chalk soils. Manual harvest. Careful sorting of fruit. 100% destemming. Vinification plot-by-plot, variety by variety. 30 day cuvaison. Rémontage and délestage to ensure gentle extraction. Fermentation at 28-30°C. Maturation in 100% French oak for 12 months. Light filtration.

🍷 ‘Chateau Manoir du Gravoux’ moves from clay-limestones plateau soil in Castillon, then into vats, with micro-oxygenation on fine lees where work in the winery is based on accurate extractions

🍷 ‘Château Les Charmes Godard’ is from a mainly clay-limestone mix soil in Bordeaux. 12 to 16 months vats and oak barrels for red wine, fermented in oak casks, then 8 months ageing on its lees.

🍷 ‘Tradition’ blend represents the greatest proportion of red wine produced by Château Penin. It is produced with grapes from vines of at least 8 years old, spread over a surface area of 13 hectares in total. Gravel soil depending on the plot, the proportions of pebbles and sands are variable. Selection of plots at harvest-time according to the age of the vines, the grape varieties and ripening. Total destemming. Fermentation in temperature-controlled stainless steel vats. 15 to 25 days vatting depending on tasting characteristics. At the end of the vinification, each vat is carefully tasted to select which wines go into this blend. Those wines, which are not good enough, are not bottled and are sold in �bag-in-box�. The ageing lasts for 12 months in vat, with regular rackings to provide the necessary oxygen to soften the tannins. The wines are tasted and notes are taken regularly every month to monitor their development and to fine-tune the final blending.

🍷’Grande Sélection’ blend is produced from a selection of parcels spread over 15 hectares of the château�s best soils, where the vines are all more than 30 years old. Soils are gravelly, pebbly, and sandy. Harvesting at optimum grape ripeness. Total destemming. Cold maceration during 5 days. Fermentation in temperature-controlled stainless steel vats for 20 to 30 days. The wines are racked into barrel at the beginning of November. The barrels are made of fine-grained Allier oak. One third of them are renewed every year. The wines age traditionally for a period of 12 months, of which 6 are spent on the lees. The wines are regularly oxygenated at the beginning of the ageing. The doses of oxygen incorporated are determined according to the richness and tannic structure of each batch.

Château Penin’s 40 hectares of vines are located between the limestone plateau and the marshland on the left bank of the Dordogne River, facing Saint Emilion. The estate has been family owned since its beginnings in 1854, when Louis Carteyron and his son Jacques purchased it. For many years, the production was divided between fruit and wine. Hubert Carteyron began direct sales of Château Penin in bottle with the 1964 vintage. His son Patrick, representing the 5th generation, took over the estate in 1982, after working as an oenologist for several years. The fruit production side of the farm then disappeared, making way for the vines, which were planted with the clear aim of producing quality grapes for wine. In 1985, a new vat cellar was built, enabling the temperature in the vats to be carefully controlled during fermentation and maceration. In 1990, a barrel cellar was built, along with a completely air-conditioned bottle storage cellar.

In 2001, a new vinification cellar was built and in 2005, respect of the environment and of customers’ health became key priorities to be addressed: setting of quality procedures and waste treatment (recovery of washing water from cellars, treatment of this water and putting on sewage farm). The vineyard has a majority of high density Merlot planted on gravel soil. Patrick Carteyron has been making cracking Bordeaux wines for a number of years now. He consistently receives high praise for his work and is one of the new wave of Bordeaux producers who succeed in delivering great early drinking wines, whilst still keeping some of the traditional balance between fruit, tannin and acidity.

Situated at the crest of one of the most beautiful hillsides of the parish of Bayon, Chateau Falfas is truly “the glory of the region of Bourg”. In the 14th and 15th centuries, this handsome estate belonged to the Lords of Lansac, ancient nobility of the sword, swearing allegiance to the English crown. At that time, the wines of Falfas were exported with privilege to the courts of the Edwards. Later in the 17th century, the domain was acquired by the Sires de Riveaux, to whom the château owes the pure Louis XIII architecture of the present building. At the end of the 17th century, the property came into the possession of the family of the President of the Parliament of Guyenne, Gaillard de Falfas, who restored the château and gave it its name.

Now comprising 20 hectares of vineyards, Château Falfas was in fact one of the very first in Bordeaux to practise organic and biodynamic methods. Today Château Falfas is owned by Véronique and John Cochran, who are building on the traditions of the past with a very simple philosophy: the best wines are not “made”, but rather “grown”. They remain passionate about practising biodynamic principles to extract the very essence of the terroir, producing authentic, rich and generous wines.

Flanked by the imposing Andes mountain range, these vineyards have unique bio-climatic characteristics, producing wines, which are distinctive expressions of the terroir

Their entry Malbec is sourced from two distinct sites, both in the Uco Valley - the wine matures for 8 months in 2nd and 3rd fill barrels (75% French, 25% American oak)

Originally, from St Andrews in Fife, the first of the Campbell clan arrived in Rutherglen over 140 years ago with the intention of mining gold. When the ‘Bobbie Burns’ seam was exhausted, the family stayed on, turning their hands first to sheep farming before diversifying into viticulture.

Today their Rutherglen Muscat is aged in a solera system for an average of 5 years - The grapes are left until late in the season to achieve optimum ripeness, ensuring maximum fruit flavor and a high degree of natural sweetness. Selected parcels of the finished wine are then added to the Rutherglen Muscat solera which is a blend of a number of vintages from many past years. Wine can only be withdrawn from this solera when it matches exactly with the previous withdrawal thus ensuring the quality and consistency of style. Blended through solera for optimum flavour and balance, this wine will not improve with further cellaring and should ideally be enjoyed soon after opening.
