Freedown Hills Olive Fed Wagyu: 30 Day Dry Aged Ribeye and Striploin
When setting out to develop something that tastes extraordinarily amazing, it helps if your base ingredient is pretty amazing to start with.
We have used our own olive fed wagyu as the basic building block and entrusted it to the butchers at Dovecote Park and their state of the art dry aging facility. The muscles are dry aged on the bone for 30 days before being b***d out and transformed into the most wonderful, tender, succulent and intensely flavoured roasting joints (or steaks) imaginable.

A similar principle has been followed in producing our amazing ducks. The starting point is the fantastic Silverhill ducks that are the duck of choice for many of the top restaurants. The caramelized olive feed that is added to their diet has the effect of increasing the tenderness of the meat whilst increasing the complex umami flavours.

Castilla y Leon Baby Back Ribs 🐷
Castilla y Leon Baby Back Ribs are from the top of the rib cage, near the spine. Tender and lean they comprise of meat between each curved bone, along with a covering of meat on top. A stunningly marbled pork, providing sublime flavour and melt in the mouth meat.
Marinade these scrumptious Baby Back Ribs to allow the delicious flavours to really get into the meat. Try adding Bourbon, dark brown sugar, smoked paprika, salt, oil, oregano and a teaspoon of coffee granules. Let the flavours be absorbed by the meat and then cook low and slow for three to four hours on either a barbecue or in a low-temperature oven. The delicious meat will fall off the bone, melting in your mouth with each bite. 🔥

Coming from Spain, Iberico pork is a type of black pig and yields darker meat than the more common breeds, with a deeper more pronounced flavour that elevates pork dishes to new dimensions. The great marbling of fat running through the muscles makes this pork uniquely succulent, flavoursome and tender.
Spare ribs are prepared from the bottom of the rib cage and are ideal on the barbecue. Meatier than their baby back ribs counterpart upper in the rib cage, these come already marinated with natural spices and the best Spanish olive oil.
