Diwali traditions differ across the world but for Executive Chef Sid Ahuja, his fondest memories are back home in India when the country lights up: “flowers and dias dress the streets, fairy lights are strung across balconies and lanterns decorate houses.”
Sid’s own memories from India and his time living here have influenced this year's Diwali Tasting Menu, particularly the Beetroot Halwa, a traditional Indian dessert (usually made with carrots), Sid’s take uses slow-cooked grated beetroots with milk, sugar, cardamom, ghee and dried fruits.
Our Diwali Tasting Menu, is available from the 21st - 31st October in the restaurant and for groups in our Private Dining Vaults. Find out more in via the link in the bio.
