Red mullet and pistachio spaghetti

Inspired slightly by my recent trip to Sicily, this little number is wonderfully delicious and easy. It combines beautiful red mullet fillets, pistachio, olive oil and pecorino. The classic Sicilian dish usually uses plump gamberi rossi prawns but I think red mullet is the perfect substitute, given its intense shellfish flavour. A simple little pesto of sorts blending Brontë pistachios with plenty of olive oil and a little pecorino. Tossed through the hot pasta with the nuggets of red mullet. Finished with a spattering of crushed pistachios and a drizzle of EVOO, this dish is dying to be enjoyed with a bottle of Sicilian Grillo.

Wild sea bass, roscoff, EVOO

Pan fried fillet of wild sea bass, paired with a gorgeously silky and rich roscoff onion soubise laced with white vermouth, perched on confit roscoff, and finished with a peppery douse of extra virgin olive oil. I served this little beauty with alongside salardaise potatoes and a mountain of earthy greens. The soubise is seriously glorious; silky and slightly sweet from the roscoffs which pairs so well with irony leafy greens and the delicate sea bass.

Really thrilled to announce our Volcanic Grown Monte Etna D.O.P. Extra Virgin Olive Oil, fresh from the mineral rich soul of Europe’s most active volcano 🌋 won the prestigious awards this year!

Since 1929, our producer has been developing artisanal products in the heart of Piedmont, Italy - home of the world famous white truffle.

Our spectacular white truffles are harvested between September to January from the hills of Piedmont, then prepared using a traditional method to extract the flavour. The truffles are then infused with a delicate Italian olive oil at a controlled temperature. When infused, the oil is filtered, bottled and a shaving of white truffle is added.
