This week we have shorter opening hours, in advance of our festive break! So pop along to stock up with your favourite items, between 11am and 4pm until Sunday 24th December.

Preserving Apples🍎🍏

If you have apples in your garden and looking for a healthy and tasty recipe to preserve them, try making your very own:

✨Apple Cider Vinegar✨

You will need:
🌱Organic Apples (or untreated), washed and chopped (skins on)
🌱Filtered Water
🌱Organic Cane Sugar
🌱A large Glass Container
🌱A dash of ready organic apple cider vinegar with the mother (not essential but helps to start the process)
🌱Clean tea towel and elastic
🌱Bottles to stores your finished ACV

Make sure your container is clean and that there are no soap residues (cleaning with plain white vinegar and hot water is a good tip).
Fill your container halfway full with the chopped apples or apple scraps.
Fill the other half with a combination of water and sugar (ratio: 1 tbsp of sugar per cup of water).
Add a good dash of ACV with the mother (specially helpful if fermenting during Winter, but not essential). Cover the container with a clean tea towel and secure with an elastic.
Now leave your container in a dark location, at about 21 Degrees Celsius.
For the first 2 weeks, stir your fermenting apples every day. You will notice the apples will turn brownish and the liquid cloudy, along with the appearance of bubbles.
After the 2 weeks, strain the apples with the help of a fine mesh strainer and return the liquid to the glass container and cover as previously.
Leave again to ferment in a dark location, no colder than 21 degrees, for at least 1 month. After 1 month, taste test it to your liking, if it is too vinegary leave it to ferment for longer (sometimes may need 2 to 3 months) before bottling).
Apple Cider Vinegar should have a PH of about 2-3, so using a PH test strip can be useful.
Once it reaches this fermentation level, bottle your ready ACV and you are ready to use! Keep in stored in a dark cool place.
It requires time and patience, but all good things do😊

Wild Garlic Pesto 🌱
This one was so good it disappeared before I could take a picture!

Tonight ours had a mix of seeds, nuts and oils, you can forage for Wild Garlic (making sure you know what you are looking for as some plants can be toxic) or grab some from our fridge, directly from

*Blend your choice of nuts (almonds, cashews, brazils, walnuts) along with some sesame seeds
*add the wild garlic along with sesame oil, olive oil, nutritional yeast and a pinch of salt
*blend until combined and serve with pasta or as a dip for crusty bread😋
