HELLO π // It's been a while since I said hello on here, and some of my newer followers might not know who I am or what I'm about, so here's a bit about me:
π« I love chocolate.
ππΌββοΈ I'm a mum of three girls aged 7, 5 and 3.
π I'm a nutritional therapist and I focus mostly on gut health and children's health, with a special interest in fussy eating.
πΈ I had never liked gin until lockdown 1 in 2020...
π I don't like to take myself too seriously and like a bit of banter.
π
πΌββοΈ I won't judge you on what you eat, but if you want help or guidance I am always willing.
β I'm a Virgo and can be a bit of a perfectionist with some things. This used to include food, but I have totally relaxed on that and now...
π I wholeheartedly believe that "healthy eating" is about the right balance, not depriving yourself of foods you enjoy, and eating plenty of veg (which I don't always do, and then complain to my husband about it π). It may also include chocolate, wine, and gin. But not at the same time.

BUCKWHEAT BANANA BREAD // Healthy, low sugar, delicious ππ
Got some overripe bananas hanging around your kitchen? Make this super easy, nutrient boosted banana bread! Great for you and the kids too π
WHY BUCKWHEAT FLOUR?
Buckwheat is a fantastic, healthy, gluten-FREE grain (tip: it's not actually related to wheat!). It's high in fibre and a source of protein, and is full of fab nutrients like magnesium and iron. It helps regulate blood sugar levels, promotes heart health, and can improve digestion. It's a great alternative to wheat based flour π
Spot the secret ingredient below that packs a further health-punch to this loaf π
INGREDIENTS
3 very ripe bananas
1/3-1/2 cup grated courgette/zucchini
2 eggs
1/3 cup olive oil or coconut oil (melted)
1/3 cup oat milk (or other milk)
1 tbsp brown sugar
1 tsp vanilla extract
1 cup buckwheat flour
1/2 cup flour/gluten free flour/additional buckwheat flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp cinnamon
1/4 tsp salt
DIRECTIONS
~ Preheat oven to 180 fan-forced
~ Line a loaf tin with baking paper
~ In a large bowl, mash the 3 bananas
~ Add the courgette/zucchini, eggs, oil, milk, sugar and vanilla to the bananas and combine
~ In a separate bowl, combine the flours, baking powder, bicarbonate of soda, cinnamon and salt
~ Add the banana mixture to the flour mixture and combine
~ Pour batter into the lined loaf tin and place in the oven for 35-40 minutes
~ Use a skewer to check the loaf is cooked
~ Best served warm fresh out of the oven!! π

LEARNING // What are you up to this weekend? This is me today, at my desk for the most part, doing some learning! π©πΌβπ«
As part of my profession, I have to do continuing education and development. Research on health, the gut, and nutrition is ever evolving and naturally we have to stay up to date on this!
But this weekend is a little different. It's all about the business development side of things, with a splash of social and cultural development, and community too π
It's a weekend of connection and belonging with other natural health practitioners, which is so important when you work by yourself, for yourself! Even though I'm attending virtually, I'm really feeling that sense of community (even though it's happening in Australia!) π
