Tostadas have a rich history dating back 2000 years in Mexico. They are believed to have been created in the ruins of Monte Alban, though no individual is credited with their invention.
The dish was originally developed as a way to repurpose stale tortillas that were no longer suitable for tacos.
At atole, we serve this treat with shrimp, rhubarb, fennel & a citrusy mayo.

The tortilla, a thin flatbread made from dried and finely ground corn, can be traced back many thousands of years to people of the Sierra Madre Mountains in Mexico. It is thought that tortillas were first developed around 10.000 B.C., near the same time that corn was first domesticated in the area.
At atole, we collaborate with small Mexican farms that provide us with a number of heirloom corn varieties, where every variety has its own flavor profile.
Everyday we make our own fresh corn tortillas from scratch, following all the traditional methods and techniques in order for our guests to experience this amazing delicacy.

Have you tried our pork belly torta?
The Mexican torta, with its layers of flavorful ingredients, is a sandwich unlike the typical ones found North of the border. Mexican tortas are a combination of European breads and New World ingredients that come together in a uniquely Mexican and delicious way.
At atole, we combine a wood-fire roasted crispy pork belly with a banana-plantain bbq sauce, a black garlic & bean crema & some pickled savoy cabbage. Don’t miss it!

It’s believed that this culinary masterpiece originated in Baja, Mexico, when Asian traders introduced the natives to the fine art of deep-frying. The dish became an integral part of the local cuisine, and it remained so for centuries.
Wild mushrooms, segueza & almonds.
Segueza is considered one of the most simple (yet rather complex) moles in the region of Oaxaca. Its base is corn, chiles & spices. At atole, we add fresh tomatoes and an amazing yuzu - habanero hot sauce by . Give it a try with a wine of your choice!
At atole we value a lot the importance of wine in a meal. Choose a congruent pairing to amplify shared flavors for a harmonious experience or a contrasting pairing to create a delightful balance of opposing tastes.

The history of this tasty treat dates back to the Aztec Empire in Central America during the 1500s. Avocados were a favorite fruit in the area and the Aztecs loved their “ahuaca-mulli”!
After many requests, our guests beloved tomatillo & cherry tomato salad is back on our summer menu. This time a little bit different. Tomatillo & cherry tomato salad with peach, habanero, fermented tomato water, lime & wild rose vinegar. Enjoy!
