Our Red Snapper (on its own or in Surf 'n' Turf) is slowly poached in a milk broth with Southeast Asian herbs, our Lobster Bisque is thick and rich as the traditional one but totally without the use of heavy cream, and you can also see the aerial view of Bali in Chef Azmi's plating! Lemons, whether in the form of lemon juice, lemon rind (including lemon zest) or lemon leaf, provide an enormous array of uses in the culinary world.

They can be used to balance sweetness, cut through fat, reduce heaviness, preserve freshness, preserve colour, tenderize meat, cook/cure foods, remove unattractive aromas, and enhance flavour.

In fact, Chef Azmi at appreciates the lemon so much that in literally every single dish EXCEPT ONE ever offered by Le Chefeteria, lemon is present!

At , we offer our form of Nouvelle French cuisine where rich, heavy foods are replaced by lighter, more delicate textures, and clarity of flavour, emphasizing the freshness of ingredients with colourful crossovers of Southeast Asian ingredients and aromatics.

Thus, instead of butter, cream and cheese, we use:
Milk, Coconut Milk/cream from fresh coconuts, and avocado

So try out our:

Lobster Bisque: Instead of cream, we use milk with coconut milk. In the middle, we give a dollop of avocado mousse mixed with a lemon citric dressing.

Avocado and Mixed Mushrooms Pasta: Instead of the traditional pasta where butter, cream, and cheese come together with carbohydrates, this is a fresh take on pasta where avocado replaces cream and where instead of grating Parmigiano Reggiano cheese to top off the pasta, we finish ours off with a lemon zest.

Duck Leg Confit Risotto: Our Risotto is NOT cooked with butter, cream or cheese, we use instead Tomato Confit and our own Vegetables stock with a small amount of our homemade pesto sauce (trace amounts of cheese).

Mashed Potatoes: Accompanying our mains, we have revised the traditional recipe of one part butter, one part potatoes. Instead, we use here only milk with coconut milk together with our Southeast Asian flavours of lemon, lemon leaf, and lemon grass.

Sugar? No thanks. I am sweet enough.
At , as part of our mission to offer meals which will be more in line with today’s lifestyle which in our opinion should be lower in salt, sugar, and fat, while being tasty and respectful of the integrity of ingredients, for our desserts, we on the most part, focus on fruit-based desserts. That’s because we believe by manipulating the natural sugars found in fruits, it is possible to offer desserts with little to almost no sugar added. To this, we concentrate our desserts on THREE fruits: Bananas, Pineapples and Mangos.
Below is our lineup of fruit-based desserts:

1. Pineapple Crumble: Made by just cooking fresh pineapples with brandy and spices and then just caramelizing again at the time of service, with crumble made from our homemade Brioche bread crumbs. Served with a scoop of our homemade ice-creams or sorbets
2. Mango Serradura: A layer of crumble made from our homemade Brioche is covered with a layer of Mango Espuma made just with Mango and Nitrogen gas. Served with a scoop of our homemade ice-creams or sorbets.
3. Banana Roti: Made by just tossing dough into very thin flatbreads, wrapping them to hold inside freshly sliced fully ripe bananas, pan-frying them and finishing them off in the oven for a flaky yet unctuous dessert

As for our two Non-fruit based desserts, Tiramisu made from Japanese Ran-Oh Eggs and our Serious Dark Chocolate Brownie, the sugar in both recipes are kept to a minimum, even half the sugar found in many other recipes, yet we have found, both desserts sweet enough!

Le Chefeteria’s menu is by default LOW in salt because we begin with whole foods instead of processed foods and canned sauces and ready made mixes. Here, we prefer to make our own stocks, sauces, pickles, ice creams, and condiments.

A beautiful example is found in our Beef Rendang Padang where the Rendang sauce is a variation of a family recipe handed down over the generations by one of our chefs from Padang. Not resorting to any ready made mix, our recipe comes from a proprietary mix of 13 spices which we show off naked sprinkled on our homemade taro chips “While you are waiting”, which are served to you before your dinner proper.

Not salty, nor sweet, spicy hot, these chips are simply aromatic, just like our Signature Melt in your Mouth Braised Beef Short Ribs Beef Rendang Padang.

Instead of salt, oftentimes to add additional savouriness, we add in our own ground spring onion ash where we take spring onions, toast them in our oven and then grind these into a fine powder.

And finally, depth in taste comes not from salt but just simply hours and hours and hours of time. That’s certainly what we have chosen to do with our Signature Lobster Bisque where by simmering over low heat for over 24 hours, we do NOT need to add Lobster paste, hence no preservatives, low salt, and no MSG.

For those taking our Pork Hock for the very first time, patrons often call out saying, “Where’s the Pork Hock?” when they eye the pile of fresh raw vegetables and pickles in front of them with the neatly shaped rectangular cut of meat in front of them.

Flavourful and rich in collagen but removed of fat, this is a delicious treat where Chef Azmi has taken off the meat off the bone, marinated it with Thai herbs and spices (sweet and sour, NOT spicy) and steamed it with Sake, finishing off with a gentle deep frying giving you a delectable crunch on the outside and moist richness in the inside. A generous flavourful pork jus incorporating Southeast Asian aromatics is then spooned on top right at the time of serving and placed beside our freshly made Thai Green Mango Salad mixed with our own homemade Thai Green Namjin Sauce.

Every dish on the menu is vegetarian with the option to change your soup to our Signature Lobster Bisque with Avocado and lemon citric OR Deluxe Lobster Bisque with Carabineros Spanish Red Prawn and with a second option in the Mains to switch to our Signature Coconut husk-smoked Argentinian Black Angus Tenderloin.

You will find such Favourites such as our Avocado Mushroom Homemade Fresh Egg Fettucine Pasta made using the yolks of Japanese Ran-Oh eggs as well as our Tomato 4-Ways Tomato Mint Soup as well as this season's Ginger Pumpkin Soup.

1-6, 10-13, 15-18 February, 2024, we will be offering our Chinese New Year Celebratory Dinner Tasting Menus complete with auspicious names at just HK$598+10% service charge pp. Just by adding HK$618, a min. group size of 8- 12 pax can already upgrade from our regular Duck Leg Confit Risotto to our NOT so Traditional Peking Duck!

7-9 February, 2024, we will offer the premium version of our Chinese New Year Celebratory Dinner by including our NOT so Traditional Peking Duck.

Semi-bookout and Bookout options are also available from HK$6.5K where you can even upgrade from our Duck Leg Confit Risotto to our Sexy Segovian Suckling Pig!
