Dover sole is prized for its delicate and mildly sweet flavour. At Rosita, we brush the whole fish with a fragrant spice mix and grill it on the bone until soft and tender. Arroz Gambas Roja. Scarlett Carabinero prawns, marinated in an aromatic white wine reduction and kombu, served with white asparagus and tender peas on Yumegokochi rice which we infuse with smoked Latin American sofrito. The dish is unified by a velvety burnt butter bisque, creating a rich yet harmonious blend of flavours and textures.
Our irresistible churros are made using a traditional recipe and deep-fried until golden brown, before being lightly dusted with cinnamon sugar. We recommend you to dip these crisp treats in the luscious dulce de leche sauce that we serve on the side.

A classic taco filling. Our Al Pastor iberico pork is slow-roasted on the bones with aromatic spices and hearty rubs until it is fall-off-the-bone tender. To balance out the robust flavours, it is paired with a refreshing chutney of pineapple and achiote orange, on a yellow masa tortilla.

Currently, our trio of reimagined traditional bites include Arepa alla Norma, Mexican cacao choux filled with guacamole and chilli, and Beef Tartare with Polenta Chips, topped with ancho chile emulsion. A creative opening act that showcases the Latin American heritage while adapting to new inspirations and seasonality.
This new dish highlights the dry-aged and barbecued Houbou fish, also known as Red Gurnard, served with piparras, pickled green chilli peppers and potatoes with a classic and delicate sauce made of butter, lemon, capers, and parsley. Finished with fosforera sauce, a Venezuelan sauce made of redfish bouillon enriched with sofrito of onion, celery, garlic, and tomato. Now available on our dinner menu.
