A bit of ‘virtuous-ness’ this morning cucumber & ginger refresher & low carb breakfast frittata. From the detox & low carb Cook-Key collections. Frittata delicious 😋, refresher not so 😜 but made us feel very healthy! Mx

GF day - making my own rice flour for a batch of gluten free brownies. Love how powerful the TMX is, enabling you to make your own flour from any whole grains. Mx
Trying some new recipes...
1. Salmon fishcakes (Cook-Key recipe) but did half salmon half prawns 🍤 & added a touch more salt & lemon 🍋 juice.
2. Carrot & swede mash (also on Cook-Key) but used parsnip instead on swede & used up a load of garlic butter I had left over.
Both a serious hit with the family & will definitely be cooked again! Mx
Menu planning for the rest of the week. Love browsing the TMX cookbooks for ideas & then using Cookidoo to plan the week, generate a shopping list & send recipes to my TMX for some guided cooking. Couldn’t be easier! Salmon fish cakes, carrot & parsnip mash with steamed green bean bundles on the menu for tonight - yum 😋! Mx
Virtuous breakfast baking for next week. Sugar & dairy free banana bread & seedy wholemeal bread. Both couldn’t be easier in the TMX & best of all the kids love both! Recipes on Cook-Key (sugar free banana bread & seedy wholemeal loaf). Mx
Now for my own recipe which I threw together this morning: Watermelon, Grape & Mint Smoothie
2 sprigs of mint
1/4 of a medium sized watermelon cut in large chunks
1/2 a bunch of red grapes
6 ice-cubes
300gm of coconut water
1.5 minutes at speed 10

Back in Hong Kong so back to weekly yoghurt making in my Thermomix. Saves us a lot of pennies - a great way to earn back your TMX. I just use the plain yoghurt recipe in the basic cookbook, making sure to add the milk powder. Use a starter yoghurt culture that is high in fat and 'live' to get best results. I also 'set' the yoghurt in individual jars placed in a Thermoserver dish but you can use any insulated dish to get the same results. Mx
Tip - the hot and humid summer months in HK are the perfect environment for yoghurt making! Mx
Love a naughty holiday treat - this 'daily loaf' white bread recipe is so reliable and always looks and tastes so impressive - just like it could have come out of a professional bakery! Smoothie central here at the moment - a great way to pack a load of fresh goodies into the kids first thing in the morning. This one is the Banana & Blueberry one from the Cook-Key - I just omitted the wheatgerm, as I didn't have any and I also used regular milk instead of almond - yummy either way! Mx
Love this vivid colour - nutritionally it is good to 'have a rainbow to eat on your plate' & this would make a perfect part of the colour spectrum. No artificial ingredients & no camera filer! Recipe on the Cook-Key - Beetroot Houmous (I used hazelnuts instead of walnuts this time and it was equally delicious). Enjoy! Mx
Back home in Hong Kong and time to get back to some long over-due Thermomixing! Looks like a cappuccino but this is in fact a delicious banana, chocolate & cinnamon smoothie - great way to start a Sunday morning!
2-3 very ripe bananas
A good handful of ice
400gm milk (coconut or almond milk would work too)
150gm creamy Greek yoghurt
1 tsp dark chocolate cocoa powder
1 tsp cinnamon powder (plus more to garnish)
Blend 1 min/speed 10. Serve immediately or leave in fridge in glasses for an hour to cool further. Enjoy! Mx
