"Min D**g Yi Yu" is renowned as a "world-class natural deep-water harbor" in Sanduao and the only inner bay spawning ground in China for large yellow croaker. Selected wild fish fry are cultivated using traditional pole fencing and net culture methods, with real-time human monitoring and no use of synthetic feed or chemical medications. 雖然名為「魚香」,但食材並不包括魚肉,當中的魚香是採用獨特的泡椒為主要調味,因烹調時產生一種獨有的烹魚味道而命名。魚香肉絲選用新鮮裡脊肉,加入萵筍、木耳、泡椒,薑、蒜蓉、陳醋為調汁等炒香,以多重調味塑造豐富滋味。

April is the perfect time for Gracilaria, as known as dragon whiskers (the tender shoots of Chayote). It got its name because the tender leaves at the top of its stem grow in curved shapes like resembling dragon whiskers.

【川菜二十四味型 | 麻辣篇】

川菜的特色在於「百菜百味」,以不同香料或醬汁,衍生層出不窮的二十四種味型,是目前全國八大菜系裡味型最豐富的菜系。當中最為人所熟悉的當然是麻辣味。麻辣主要由辣椒、花椒、葱等調味調製而成,其辣味會令舌頭感到麻痺,因而得名。常見的麻辣味菜式包括水煮牛肉、夫妻肺片、麻婆豆腐等,以濃厚豐富的麻辣味帶出川菜獨有風味及口感,造就出一道道川菜的經典菜式。

【24 flavours of Sichuan cuisine: Spicy (Ma La)】

The essence of Sichuan cuisine lies in its "hundred dishes, hundred flavours", and the 24 different taste profiles derived from various spices and sauces. It is currently the most diverse cuisine among the eight major regional cuisines in China. The most well-known taste would be the spicy flavour, also known as "Ma La" in Chinese. This spicy taste is primarily made from seasonings such as chili peppers, Sichuan peppercorns, and scallions, etc. Its spiciness can numb the tongue, hence the name.

Signature dishes featuring the Ma La include braised beef in red chili broth, Ox Tongue and Tripe Medley and Mapo Tofu. The rich and intense spicy flavors elevate their unique taste and texture, creating a series of classic Sichuan dishes.
