For our autumn season menu, we begin with a delicately crafted dish that is both light and close to our hearts. We take the art of tofu-making to new heights by encasing fresh crab and caviar within a sphere. The addition of three vibrant oils not only alters the texture of the tofu but also adds an extra dimension to the dish, enhancing its overall flavor profile.

An Ode to Tomato: Our summer menu kicks off with a refreshing and cooling terrine featuring smoked and juicy tomatoes, bitter gourd blanched in milk, and tomato jelly, all topped with a shiso pesto and crispy Parmesan tuile in a custom Chinese window design.

We were thrilled to host Mr. Alexandre Bader from Maison Billecart-Salmon at our wine maker's dinner in quite some time. It was an exciting opportunity to showcase the art of pairing exquisite cuisine with exceptional wines.
Our guests were treated to a delightful evening as we explored Billecart-Salmon's Champagne offerings, crafted with unparalleled "Savoir-Faire." The highlight of the night was a very special Jeroboam 1998 of Cuvée Nicolas Francois, which left a lasting impression on everyone present.

White Asparagus Blanc-Manger with Squid in Green Pepper Paste and topped with Caviar: A seasonal delight, white asparagus is known for its delicate flavor, which has an earthy, mildly sweet, buttery, and slightly nutty taste, accompanied by a hint of bitterness.

The absence of chlorophyll in white asparagus results in a milder and less grassy flavor compared to green asparagus.

On 6 February 2023, a devastating earthquake happened in Türkiye and Syria. To support urgent response efforts for the survivors, Tate Dining Room is collaborating with six other chefs for a one-night-only dinner, Chefs for Türkiye Charity Dinner, at LOUISE], presenting a 7-course dinner priced at HK$4,888 per guest. 100% of proceeds from the evening will go towards AFAD] association, which coordinates with Türkiye's response to several devastating earthquakes and floods and aids survivors in getting their lives back on track.

A silent auction will also be held that evening to raise funds and support the affected communities in urgent need of aid.

About TATE Dining Room

Established in 2012, TATE Dining Room is a fine dining restaurant serving an eclectic mix of French and Chinese cuisine presented in what they call, Edible Stories – an exploration into culinary expressionism. The talented individuals of TATE’s team create dishes with not only the freshest and the most vibrant ingredients possible, but also the utmost attention on quality, flavor and every intricate detail; serving up wholesome yet tantalizing dishes.

Founded by Vicky Lau, chef and owner of TATE who has always been a creative spirit. Having been a creative director for a number of years, she was inspired to tap into an extra dimension to her creative vision – and her lifelong passion for food – and enrolled at Le Cordon Bleu to obtain her Grand Diplome. Following her stint at Le Cordon Bleu, Chef Lau officially made her maverick move from design to embark on her culinary career and was working at one of the most acclaimed Michelin-starred restaurant in Hong Kong. Having gained invaluable firsthand experience, Chef Lau realized her vision by combining the best of her instincts and talents in design and food into a space where guests are invited to share and experience her passion -- at TATE Dining Room.

In 2015, Chef Lau has been named V***e Clicquot Asia’s Best Female Chef by World’s 50 Best Restaurants and the restaurant has also been consecutively awarded 1 Michelin star since 2013.
