FRESH MUTTON KHEEMA
QUICK RECIPE FOR MUTTON KHEEMA PAV :

Step 1
Boil green peas in salted boiling water for five minutes or till almost cooked. Refresh in cold water. Drain and leave aside. Heat oil in a thick-bottomed pan, add green and black cardamoms, cloves, cinnamon and bay leaves. Stir-fry briefly.
Step 2
Add onions and cook on medium heat, stirring continuously till they turn golden brown. Add ginger paste and garlic paste and stir briefly.
Step 3
Add tomato and cook till oil starts separating from the masala. Add mutton mince and cook on high heat for three to four minutes, stirring continuously.
Step 4
Reduce heat, stir in half a cup of water and cook covered till mince is completely cooked. Stir occasionally. Add red chilli powder, turmeric powder, cumin powder, coriander powder, salt and boiled green peas.
Step 5
Mix well and cook on high heat for couple of minutes or till the mince is quite dry. Sprinkle garam masala powder and garnish with coriander leaves.
Step 6
Heat butter in a thick-bottomed pan or a tawa. Slice pav horizontally into two and pan fry in butter for half a minute, pressing two or three times or till pav is crisp and light brown.
Step 7
Serve mince accompanied with pan-fried pa

FUN FACTS: Traditionally Nihari was cooked all night and then served to the Mughal Kings of Delhi in breakfast after the morning prayers.
From the royal kitchens of the Mughals, the dish has now crossed all borders of region, religion, and course. However, since it takes a long time, almost 5 hour, to cook Nihari, it is mostly reserved for special occasions like Eid dinners and other festivities.

Mutton Biryani Pieces..
Easy and Quick Recipe : Hyderabadi Mutton Biryani

Step 1 Wash the rice and soak in water for 40-45
minutes.

Step 2 Tie whole spices in a cloth piece to make a potli.

Step 3 Mix mutton with raw papaya paste, ginger paste,
garlic paste, garam masala powder, red chilli powder,
turmeric powder, salt, vegetable oil, green chilli and
lemon juice and marinate for 10-12 hours.

Step 4 Add Curd, Mint, coriander and golden fried
onion in the marinated mutton and mix well.

Step 5 Heat water in a large pot. Add potli masala, salt
and shahi zeera in the pot and bring the water to a
boil.

Step 6 Drain the rice and add it in the boiling water.

Step 7Transfer the mutton along with the marinade in
a heavy bottom pan.

Step 8 Once the rice gets 20% cooked, take out half of
the rice and top it over the mutton.

Step 9 Once the remaining rice is cooked to 80 %, take
it out and top it over the 20% cooked rice.

Step 10 Sprinkle 1/2 cup milk, saffron soaked in water ,
golden brown onion and ghee on top.

Step 11 Cover the pan tightly with a lid. Place the pan
on a very slow heat for 50-55 minutes.

Step 12 Remove the lid and mix the biryani gently.
Serve hot.
